Seasoned Gulf Coast Grouper w/ Baked Tater Tots

Dinner Tonight: Seasoned Gulf Coast Grouper w/ Baked Tater Tots






To start this rainy Friday morning off I prepared one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a Sunnyside Up Fried Egg. Well the rains have finally eased up! Had a light sprinkle and then cloudy and 50 degrees. Went Kroger for Mom after Lunch and stopped by the Bank for her. Not a lot going on today. For Dinner tonight its a Seasoned Gulf Coast Grouper w/ Baked Tater Tots.



I love my Fish and Seafood, especially this Florida Gulf Coast Grouper. I had a couple small fillets of
it in the freezer, laid it in the fridge overnight to thaw. This is the last bag of Grouper I have left that
my friends bring me back from Florida's Gulf Coast, hope they do some fishing soon! So to prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful.



As my Grouper was cooking I preheated the oven on 425° to bake some Ore Ida Tater Tots. Just bake at 425 degrees for about 15 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn and a Diet Peach Snapple to drink.

















Grouper – Firm texture, white meat with large flake and a mild flavor. Extra lean fish.

Mostly cloudy and 76 degrees in the afternoon. Finished up on the Kitchen painting, looks 100% better! For Dinner tonight its a Seasoned Gulf Coast Grouper w/ Baked Tater Tots.

I served them with a side of Hunt’s Ketchup. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Bacon Double Cheddar Chicken Sandwich w/ Tater Tots

For Breakfast I had a bowl of Cherrio's along with a cup of Bigelow Decaf Green Tea. After Breakfast I headed to the local Kroger up the road. Needed a few things for tonight's Dinner. Usually
when I go early to Kroger there's hardly anyone there. But not today, I forgot it was Valentine's Day! I was luck to find a handicap parking space, someone happened to be pulling out and they left their electric cart out also. Kroger made a fortune on Cars, Flowers, and Candy sales! I got what I needed and headed back home. I'm glad I did go early though as it started pouring the rain as I got back home. Not much else going on today. I did put a Pork Loin Roast in the Crock Pot and let it cook on low for 7 hours for tomorrow's Dinner. For my Dinner tonight I prepared a Bacon Double Cheddar Chicken Sandwich w/ Tater Tots.



I purchased a package of Tyson Thin Cut Boneless Chicken Breasts at Kroger. I'll also need the following to make the Dish; al fresco Uncured Chicken Bacon, Boar's Head Deli Sliced Yellow Cheddar and White Cheddar Cheese, Jack Daniel's Honey Smokehouse BBQ Sauce, Lettuce, and Aunt Millie's Whole Grain Mini Sub Buns.









I first fried the al fresco Uncured Chicken Bacon. I started by grabbing a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. This Bacon fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need to 2 slices but fried up 5 slices. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it!







Next I fried the Thin Cut Chicken Breasts. I'm using the Tyson Thin Cut Boneless Chicken Breasts. I got a large skillet that I sprayed with Pam Non Stick Cooking Spray and added a tablespoon of Extra Light Olive Oil. I then heated the skillet on medium heat. I seasoned the Chicken with Morton's Lite
Salt and Ground Pepper. Then rolled the Chicken in seasoned Flour. I had seasoned the Flour with Ground Smoked Paprika. With the skillet heated I added the Chicken. I fried it 2 minutes and flipped it over and cooked it another 2 minutes and flipped it back again. Cooked it until the Chicken had an internal temperature of 165°. Cooked it a total of 15 minutes. With about 1 minute or so of cooking time left I topped the Chicken Breasts with a slice of Yellow and slice of White Cheddar Cheese. The Chicken came out perfect. Nice browning on the outside moist and juicy inside, and the Cheese melted beautifully! 




As my Chicken was cooking I preheated the oven on 425° to bake some Tater Tots.I used Ore Ida Golden Tater Tots. Just bake at 425 degrees for about 15 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup. 











As the Tater Tots were finishing up I made my Sandwich. I got the Mini Sub Buns and took the bottom half and put Lettuce down, added the Chicken Breast, topped that with the Jack Daniel's BBQ Sauce, the Bacon, and the top half of the Sub Bun. Quite a sandwich! I'll have to start having this more often! With the Tater Tots it came out one delicious Dinner! For Dessert/Snack later a bowl of Skinny Pop - Pop Corn and a Diet Peach Snapple.

Panko Crusted Cod Fish Sandwich w/ Tater Tots

Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Tater Tots




Started my morning off with a Egg Beater's Egg White Scrambled, a slice of Boar's Head Black
Forest Ham, served on a Healthy Life Whole Grain English Muffin. A lot colder out there today, it was 33 degrees this morning and one cold wind blowing. The day didn't warm up much, sunny and a high in the 30's. Gave Mom a hand cleaning out their bedroom walk-in closet, a lot of clothes headed to Good Will. After that it was house cleaning time, dusted and vacuumed. For dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Tater Tots.
 




I had purchased the Cod from Kroger and had it in the freezer. I laid 2 small fillets in the fridge
overnight to thaw. To prepare the Cod I rinsed the fillets off with cold water and patted dry. Then seasoned it with McCormick Grinder Sea Salt and Peppercorn Medley. Combined the flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dip the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Place fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and place the fillets in and saute 3 minutes each side, or until fillets are heated through and Panko Crust has browned. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun.




Then to go with the Fish Sandwich I prepared some Tater Tots. Love those Tater Tots and I always use Ore Ida Mini Tater Tots. Just bake at 425 degrees for about 15 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup. Fish and Potatoes, a perfect pairing. For dessert later a Jello Sugar Free Double Chocolate Pudding.








Panko Crusted Cod Fish Sandwich

Ingredients:

(4) 4oz. Orange Roughy or Cod Fillets
1c. Panko Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Extra Virgin Olive Oil

Directions:

* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.

* Meanwhile, heat canola oil in skillet and place the fillets in oil and saute 4 minutes each side, or until fillets are heated through and Panko Crust has browned.

Deep Fry: Caution: Ice crystals on frozen foods can cause spattering when added to hot oil. Add product carefully. Tips for Frying with Oil: Always preheat oil uncovered. If oil splatters, cover immediately and reduce heat. When splattering stops, remove cover and return to cooking temperature. Be careful not to spatter or spill oil onto hot burner of range. 1. Preheat cooking oil in electric deep fryer to 375 degrees F, check oil temperature. Fill deep fryer not more than half full of oil. 2. Fill fryer basket not more than half full of frozen mini tater tots. Carefully lower basket into hot oil. 3. Fry 3-4 minutes. Cook to a light golden color. 4. Drain on paper towels. Season to taste.

5 oz. Petite Buffalo Top Sirloin Steak w/ Tater Tots and Baked Beans

Dinner Tonight: 5 oz. Petite Buffalo Top Sirloin Steak w/ Tater Tots and Baked Beans






Cloudy morning turned into a sunny afternoon and it warmed up to about 60 degrees! Made a Chili Omelet for Breakfast this morning. Using my Crock Pot 3 Bean Buffalo Chili and Egg Beater's Egg Whites, also sprinkled some fresh shredded Smoked Goda on top of it. A very good start to the day! After Breakfast I started a load of laundry for Mom. Next it was Christmas Present delivery day. I dropped off gifts and candy to a few friends. Love the Spirit of Christmas! Back home did a few things around the house and finished up the laundry. For dinner tonight I prepared a 5 oz. Petite Buffalo Top Sirloin Steak w/ Tater Tots and Baked Beans. The trio of Steak, Potatoes, and Beans make one delicious meal!





I’ll be using Wild Idea Buffalo Petite Top Sirloin Steak (5 oz.). To prepare the Steak; I rubbed the Steak with a 1/2 teaspoon of Extra Virgin Olive Oil. Then seasoned it with Dried Rosemary, McCormick’s Grinder Sea Salt and Peppercorn Medley. As the Steak rested I preheated a Cast Iron Skillet on medium heat. When the skillet was heated I added my Buffalo Sirloin, cooked it 4 minutes per side to a beautiful Medium Rare! The Wild Idea Buffalo Steaks are just incredible. So juicy and the best flavor of any Steak, Beef or Buffalo I’ve ever had. As always when cooking Buffalo, keep an eye on it it will get done quickly. They cook faster than marbled meat and when overcooked will be tough and dry. Buffalo is best cooked medium-rare or rare.






I had picked a bag of Ore Ida Mini Tater Tots at Kroger a while back. Who doesn't like Tater Tots, love these things!  Just bake at 425 degrees for about 15 minutes and done! The tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup.










Then for another side dish I prepared a small can of Bush’s Vegetarian Baked Beans. First time I
prepared these I fell in love with the flavor and taste of the Vegetarian Beans! Only 130 calories, 0 fat, and 24 net carbs per serving. To prepare the; just open the can and empty the Beans Into Saucepan. Heat To Simmer until heated through. Love these Beans, becoming one of my favorite sides real quick. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.
