Fried Red Snapper w/ Hash Browns and Golden Hominy

Dinner Tonight: Fried Red Snapper w/ Hash Browns and Golden Hominy





Skipped Breakfast this morning, not really hungry. I did  just have a cup of Bigelow Decaf Green Tea though. Went to Meijer for a few items and back home. Later went over to a Lawn and Garden Center and took a look at few plants and bushes. Back home I planted a couple of bushes I bought in the backyard. Not feeling up to par today so I kicked back the rest of the afternoon. We are watching my cousin's 2 girls tonight for about 4 hours or so. For Dinner tonight it’s Red Snapper! I prepared a Fried Red Snapper w/ Hash Browns and Golden Hominy.



I had purchased the Red Snapper at the Kroger Seafood Department last week. I had it in the freezer so I laid the fillet in the fridge to thaw overnight. To prepare the the fillet, I first rinsed the Snapper off in cold water and patted dry with a paper towel. I seasoned it with McCormick Grinder Sea Salt. Then put the fillets in a Hefty Zip Plastic Bag and added Zatarain’s Lemon Pepper Breading Fish Fri. Then shook the bag until the fillets were well covered, removed from the bag shaking off the excess. I then pan fried it in a Cast Iron Skillet, that I had preheated, in Canola Oil. I fried it skin side down for 4 minutes and then flipped it over to the flesh side and fried it another 3 minutes. Golden brown and nothing but delicious! The fresh taste of the Snapper combined with the Zatarain’s Lemon Pepper Breading Fish Fri is a perfect pairing.


For one side I prepared some Simply Potatoes Hash Browns, I always use Simply Potatoes Hash Browns. Fried them in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley.










For another side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden
Hominy. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! For a Snack later some Honeycrisp Apple Slices.

Seasoned Haddock w/ Mac and Cheese

Dinner Tonight: Seasoned Haddock w/ Mac and Cheese




For Breakfast this morning I Scrambled a couple of Eggs, topped them with a sprinkle of Sargento
Reduced Fat Shredded Sharp Cheddar Cheese and a few shakes of Frank's Hot Sauce. I also toasted a couple of slices of Aunt Millie's Light Whole Grain Bread and a cup of Bigelow Decaf Green Tea. Mostly cloudy and 63 degrees out, rain late in the day. After Breakfast I headed to Meijer, I needed a few items I needed to make tomorrow night's Dinner. Back home did some work outside. Cleaned off the deck and driveway areas. Then got the cart out and raked some leaves in back and side yards. Leaves are already falling!  For Dinner tonight I prepared Seasoned Haddock w/ Mac and Cheese.



I had purchased a Haddock fillet from Kroger the day before. I rinsed the fillet off in cold water and patted dry with a paper towel and had them in a plastic bag in the fridge. To prepare it I sliced it in half. So to prepare it I seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until both pieces were well coated. Shook off the excess and pan fried them in Extra Light Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.



Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac
Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

For Breakfast this I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam and as usual had my morning cup of Bigelow Decaf Green Tea. Outside we had rain on and off for most of the day, about 49 degrees for a high. After Lunch I went to the rehab center to see Dad and while there I went to therapy with him. He's doing really good with it, might get to home soon! Back home and not a lot going on the rest of the day. For Dinner tonight I prepared Catfish Nuggets w/ Cut Italian Beans and Oven Fries.





I had purchased the Catfish Nuggets from Kroger and had them in the freezer so I let them thaw in the fridge overnight. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Virgin Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. I love using all these Zatarain’s Products!



For one side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty the
can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! I could have Beans every day and never get tired of having them.










For another side I prepared some Alexia Oven Fries with Olive Oil, Rosemary and Garlic. I think this is the second time I tried these. I picked a couple of bags of these up at Jungle Jim’s International Market on my last visit there. They are already seasoned with Olive Oil, Rosemary and Garlic. I also seasoned them with some Morton’s Lite Salt. They baked up perfectly and tasted great, as all the Alexia Potato. Great to have a bag of these handy in the freezer!

To start the day I made some Simply Potatoes Hash Browns along with some Glier's Turkey Goetta,
love that Goetta! Also had a cup of Bigelow Decaf Green Tea. I had planned on going to Meijer after Breakfast but heavy rains sort of washed that plan out! Not quite as hot but still humid and rainstorms on and off all day. So it's another inside day today. Not a whole lot to  do, cau8ght up on everything. Cleaned the microwave, stove, and refrigerator just for something to do. Dinner tonight I prepared Seasoned Haddock w/ Roasted Garlic Cauliflower and Fiesta Lime Corn.





I had purchased the Haddock from our local Kroger and had it in the freezer. So I grabbed a bag and
let it thaw in the fridge overnight. I had already rinsed the fillet and cut it into smaller pieces. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.


For one side I prepared something new I had picked up at Meijer in the frozen food section, Path of
Life All Natural Roasted Garlic Cauliflower. Love shopping at Meijer, great selection of products! I had purchased a couple of Bags of it and had used one earlier. So to prepare the Cauliflower; It comes in a microwavable steamable bag. Just heated for 4 minutes, let it stand for 1 minute and serve. I’ve got another keeper product here! Fantastic Roasted Garlic flavor and they’re only 80 calories and 3 net carbs.






For a second side I tried a new frozen food item, Birds Eye Fiesta Lime Corn. First time trying this.It
comes frozen in a microwavable bag. To prepare it; Place frozen, unopened bag this side up in microwave. Do not pierce bag. Microwave on high. During cooking, the bag will slowly inflate. A special vent in the bag will allow the steam to escape and a whistling sound may be heard. Let stand for 1 minute after cooking. Remove from microwave. Hold bag over serving dish. Tear bag at notch. Pour, stir and done! Another good frozen side to have in the freezer. Nice amount of Corn and very good seasoning. Haddock, Cauliflower, and Corn, nice trio for Dinner! The Cauliflower and Corn make a very tasty and healthy pairing.  For dessert later a SO Delicious Ice Cream Sandwich.

Had a light Breakfast, Healthy Life Whole Grain English Muffin topped with Smucker's Sugar Free
Blackberry Jam. After Breakfast I headed up to Kroger, Didn't go to the one up the street, it's a smaller Kroger and they carry fewer items than the bigger stores. Plus it's always poorly stocked! So I went to the Kroger Market Place which is a bit further away. They had some sale items I needed and loaded up on some fresh produce. I had read an article on Red Bananas and Kroger had some so I bought 3 of them. Red bananas are shorter, plumper and heartier than the average banana and taste's like a dry and chalky starch. When ripe, it will have a thick, brick red peel and ivory-hued semi soft flesh. Its flavor is sweet and creamy with raspberry highlights. So I had one for my mid-day snack and didn't care for it. I didn't like the texture or taste of it, gave it a try though. I also bought a new 4 qt. Crock Pot to replace the one that quit working. So for my dinner tonight I prepared a Seasoned Haddock w/ Whole Baby Carrots and Cut Green Beans.




I had a few bags of the Haddock Fillets in the freezer, that I had purchased from Jungle Jim's Market,

The Zatarain’s Lemon Pepper Fish-Fri is a perfect seasoning for the mild Haddock.






For one side to go with the Haddock I prepared a can of Kroger Brand Whole Baby Carrots. These
are so much easier to prepare than boiling fresh Baby Carrots, and they taste just as fresh and good. Then I also heated up a can of Del Monte Cut Green Beans. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.
