Kitchen Hint of the Day!

Cool as a Cucumber.........

When storing a cucumber, keep it away from apples and tomatoes, which will shorten its life. Cucumbers stay fresh for up to a week, when the water content starts to drop.

One of America's Favorites - Vienna Sausage

A Vienna sausage (German: Wiener Würstchen, Wiener, Viennese/Austrian German: Frankfurter
Würstl, virsli or European vienna sausage
Würstel or Würstl, Swiss German Wienerli, Swabian: Wienerle or Saitenwurst) is a kind of sausage most frequently made from chicken, beef, or pork in chicken broth. It describes different products in different places. The word Wiener means Viennese in German; in Austria the term Wiener is uncommon for this food item, which instead identifies a type of cold cut.

The ingredients, preparation, size and taste can vary widely by both manufacturer and region of sale.

In some European countries, cooked and often smoked wiener sausages bought fresh from
Smoked Vienna sausages
supermarkets, delicatessens and butcher shops may be called by a name (such as in German or French) which translates in English as "Vienna sausage." Traditionally, they are made from spiced ham. Wieners sold as Vienna sausage in Europe have a taste and texture very much like North American "hot dogs" or "frankfurters", but are usually longer and somewhat thinner, with a very light, edible casing. European Vienna sausage served hot in a long bun with condiments is often called a "hot dog", referring not to the wiener itself, but to the long sandwich as a whole.

In North America the term "Vienna sausage" has most often come to mean only smaller and much

shorter smoked and canned wieners, rather than hot dogs. North American vienna sausages are made from pork wieners, finely ground to a paste consistency and mixed with salt and spices, most notably mustard, then stuffed into a long casing, sometimes smoked and always thoroughly cooked, after which the casings are removed as with hot dogs. The sausages are then cut into short segments for canning and further cooking. They are also available plain (in a gelatin, similar to aspic) or with a variety of flavorings, such as smoke, chili or barbecue sauces.

In some regions (especially the South) these canned Vienna Sausages are colloquially referred to as "Veye-EEnna" or "Vie-ee-nee" (vɑI-iː-nə / vɑI-iː-ni) sausages, or simply "vie-ee-nees." They are a common staple in lunches for skilled trade workers (such as construction trades) due to their ability to be eaten without being heated, their portability and stable shelf life in hot climates. They are often paired with saltine or Ritz Crackers.

Fried Walleye Fillets w/ Black - Eyed Peas and Diced New Potatoes

Dinner Tonight: Fried Walleye Fillets w/ Black - Eyed Peas and Diced New Potatoes

For breakfast this morning I made Scrambled Eggs using 2 medium Eggs and a couple of Jennie - O Turkey Breakfast Sausage Links. After breakfast I went to Kroger for Mom. Went early to avoid the mayhem that all stores will be facing today! Not a bad day to be Christmas Eve, sunny and a high in the 50's. I'm not sure if it's the weather or something else, it doesn't seem like Christmas. Friends of mine say the same thing. Not sure what it is. For dinner tonight it's Fried Walleye Fillets w/ Black - Eyed Peas and Diced New Potatoes.

I had the Walleye in the freezer so I laid the fillets in the fridge overnight to thaw. They are  some of
the fillets I had bought at Meijer a while back, and some of the best Walleye we've had. To prepare them I rinsed them off in cold water and patted dry with paper towel. Seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put them in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till all fillets were well coated. I then fried them in Extra Virgin Olive Oil on medium heat, about 3 to 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor. Along with Crappie, they're my favorite Fresh Water Fish to eat.

For one side I prepared a can of Kroger Brand Black Eyed Peas. First time I tried these and really enjoyed them, have to keep a can or two in the pantry. To prepare them just emptied the can into a small sauce pan and heated until warmed, low simmered so not to overcook.

Then for another side it was Del Monte Diced New Potatoes. I've had these many times and as always delicious! To prepare these; empty the Potatoes into a small sauce pan and heat on medium heat until heated through. Fish, Beans, and Potatoes for Dinner! For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Kitchen Hint of the Day!

Chicken Stickin.....

When Grilling Chicken, always grease the rack well. Because as the Chicken coos, the collegen in the skin turns into a sticky gelatin, which in turn will stick to the grate. Another way to solve the problem is to sear the Chicken on the grill, and then finish it in a preheated oven for 15-20 minutes, breast side up.
