Deep Dish Rustic Buffalo Pizza
Buffalo Rustic Pizza serves 8 to 12
This is an adaptation of a recipe from a gourmet magazine, from years ago.
Ingredients: Prep ingredients before making crust.
1 lb. Wild Idea Buffalo Italian Sausage
2 lbs. spinach leaves, washed
4 eggs
15 oz. ricotta cheese
2 garlic cloves, minced
5 red bell peppers, roasted, peeled, seeded and coarsely chopped
or 24 oz. jarred roasted red peppers, coarsely chopped
8.5 oz. jarred sun-dried tomatoes, flash processed
2 cups Parmesan cheese, grated
8oz. provolone cheese, sliced
salt and pepper
Dough Ingredients:
4 cups flour
2 teaspoons sugar
1 cup cold salted butter, sliced
4 eggs, lightly beaten
Instructions:
1.) Brown meat in heavy large skillet over medium high heat. Remove sausage from pan leaving a little fat in skillet. Cover sausage and set aside.
2.) In same skillet, over medium heat, add half of the spinach, cover, but toss occasionally until all leaves are wilted. Place wilted spinach in colander and repeat same step with remaining half of spinach.
3.) Press spinach with back of spoon in colander to push out water. Season spinach with a pinch of salt and pepper.
4.) In bowl, mix eggs, then add ricotta and garlic. Season with a pinch of salt and pepper.
5.) In mixing bowl, using a pastry hook, mix together dough ingredients in order listed. Mix until incorporated.
6.) Form dough into a ball and removing 1/3 of dough. Roll 2/3 of dough out on floured parchment paper or plastic wrap, forming large 16” circle. Roll out remaining dough in the same fashion into a 10” circle.
7.) Remove paper from top of dough and slide your hand under the bottom paper. Gently flip dough
into a 9” spring-form pan. Press dough down lightly into pan and up pan sides.
8.) In this order, layer your ingredients inside dough; half of spinach, half of ricotta mixture, all of the red bell peppers, half of parmesan, all Buffalo Italian Sausage, all provolone, all sun-dried tomatoes, remaining spinach, remaining ricotta and remaining parmesan.
9.) Remove paper from top of remaining dough and slide your hand under the bottom paper. Gently flip the dough onto the top of the pie. Pinch dough seams together, using a little water if necessary.
10.) Place foil around pan to avoid any dripping from pan. Bake in 375* preheated oven, for 1½ hours. Remove and allow to rest for 10 minutes before cutting.

Kitchen Hint of the Day!
Pass the Peas....
When cooking shelled fresh peas, add a few washed pods to the water. They will improve the flavor and give the peas a richer color.

Blackened Grouper Sandwich w/ Baked Potato Puffs
Dinner Tonight: Blackened Grouper Sandwich w/ Baked Potato Puffs
Another night of heavy rains that finally ended. Lot of rain of late. It was very long afternoon yesterday trying to take care of Dad. He has panic attacks along with his dementia, it can very trying.
Yesterday was a rough day for all of us! We started back with in-home nurse visits, he seems to respond better knowing a nurse checks him out. We are also going to get in home care. They come in 3 times a week to help with care for him. If this doesn't work I'm afraid we may have to put him into assisted living. Hopefully things will work out soon. For Breakfast I made us all a Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. You can serve this topped with a fried Egg, diced Onions, or Shredded Cheese. I topped mine this morning with Sargento Reduced Fat Shredded Colby – Jack Cheese and a Fried Egg Sunnyside Up. Just cleaned the house and straightened everything up before the nurse got here. Then helped Mom with a couple of loads of laundry. For dinner tonight I prepared a Blackened Grouper Sandwich w/ Baked Potato Puffs.
Using a Grouper fillet from the Florida Gulf Coast my friends brought me last week, thank you Jim and Linda! I had them in the freezer so I got one of the fillets out of the freezer and let it thaw overnight in the fridge. To prepare it I rinsed the fillet off in cold water and patted it dry with paper towel. I then seasoned them it with a bit of Sea Salt. Then I melted 1 tablespoon of Blue Bonnet Lite Butter and rolled the fillet in the Butter. I then added the Zatarain’s Blackening Seasoning, coating both sides of the fillet.
Next I preheated a Cast Iron Skillet that I sprayed with Pam Cooking Spray. When the pan was fully
heated, on medium heat, I added my Grouper. At this point turn on your Stove Overhead Exhaust Fan on, because it will start smoking from the seasoning. Cooked it about 4 minutes per side, and it was ready! Cast Iron Skillets are perfect to use for any cooking but especially when you Blacken something. The Skillet heats up and holds it heat and the heat evenly distributes across the Skillet, perfect for Blackening Meats. This is one delicious Grouper! The fresh taste of the Grouper along with the Blackening Season are a perfect combo. Love Fish, Love Seafood! I served it on a Aunt Millie's Reduced fat Whole Grain Hamburger Bun and I topped the fillet with some McCormick Tarter Sauce.
I also baked some Alexia Potato Puffs. To prepare them; Preheat the oven to 425 degrees F. Arrange the frozen potatoes in a single layer on a baking sheet lined with foil. Baked for 25, stirring halfway through the cooking time. Browned up perfect with excellent seasoning. Perfect Potato side dish. For Dessert later a bowl of Dole Sliced Peaches.
Grouper
A fish weighing from 5-15 pounds. The flesh is lean and firm, but the skin is strongly flavored and
should be removed before cooking. Popular varieties are the black grouper, Nassau grouper, red grouper and yellowmouth/yellowfin grouper.
Season: available year-round
* How to prepare: braise, grill, poach, saute, steam
* Matches well with: garlic, honey, lemon, mustard, spinach, white wine
* Substitutions: halibut, sea bass, snapper

Kitchen Hint of the Day!
Next time you're cooking corn....
Never add salt to the water when boiling corn; table salt contains traces of calcium, which will toughen the kernels. Instead, add a little milk, which will bring out the sweetness of the corn.
