This week's Sunday Pizza is (Buffalo) Pepperoni Pizza. Topped with Pepperoni, Wild Idea Buffalo Pepperoni! The recipe includes a recipe for the dough to make your own Pizza Pie. You can find this recipe and purchase the Buffalo Pepperoni all on the Wild Idea Buffalo website. http://wildideabuffalo.com/
PEPPERONI PIZZA
When the moon hit’s your eye like a big pizza pie that’s amore! According to Dan, there is only one kind of pizza - PEPPERONI! Dan is a purest and doesn’t care for unnecessary ingredients. I’m ok with that, as long as the ingredients aren’t questionable. Our in-house artisan chef has created a first rate pepperoni using 100% buffalo and organic ingredients. No nitrites or other scary ingredients, just pure pepperoni love! (Makes 3 medium pizzas)
Ingredients:
1 - 8 oz. Buffalo Pepperoni, sliced
1 - recipe pizza dough (below)
1 - cup + organic pizza sauce
12 - ounces fresh mozzarella, drained and sliced/shredded
4 - ounces Parmesan, freshly grated (about 1½ cups - not packed)
Cornmeal
Flour
Preparation:
1 - Arrange oven racks in the mid to lower part of the oven. Preheat oven or convection oven to 500°. Convection oven will automatically reset to 475°. Dust pizza pans or stones with cornmeal.
2 - Prepare dough recipe below as recommended. Place dough out on a lightly floured surface and roll out in a circular shape. Transfer the rolled dough carefully to the cornmeal dusted pizza pans. Push the dough around with your hands to reshape, rolling and pinching the outer perimeter of the dough for a thicker crusty edge.
3 - Spoon about a third cup of sauce (or as much or as little as you like) onto each pizza and spread around.
4 - Top each with about 4 ounces of mozzarella cheese, followed by equal portions of Wild Idea Buffalo Pepperoni, and finishing with the grated Parmesan.
5 - Place pies, one or two at a time in the oven and bake for 15 minutes or until crust is browned and toppings are bubbly.
6 - Remove from the oven and transfer to a cutting board. Allow to set for 5 minutes before cutting. Pure PEPPERONI goodness!
* PIZZA DOUGH (makes 3 medium pies or 6 individual)
* The best pizza dough! Recipe credit goes to, Peter Rienhart.
Ingredients:
4½ - cups high protein flour (I used half Kernza whole grain flour & half organic bread flour)
1¾ - teaspoon salt
1 - teaspoon quick yeast
2 - tablespoons olive oil
1¾ - cup water, very cold
Preparation:
* In mixing bowl using a dough hook, sift flour, salt and yeast together on medium low speed. Add olive oil and water, scraping down sides as needed. Continue to mix for 6 minutes, stopping every two minutes to remove dough from the hook. Dust hands with flour and remove dough from mixer and place on flour dusted work surface. Knead dough for 1 to 2 minutes. Dough should spring back from touch. Divide into desired sizes and form into balls. Brush dough lightly with oil, place on lightly oiled baking sheet and cover loosely with saran or a plastic bag. Refrigerate for 8 hours or up to 3 days. Remove from refrigeration and allow to rest at room temperature for 4 hours. Proceed to Pizza instructions. *Dough can also be frozen for up to 3 months.

From the Diabetic Living Online website it's Diabetic Recipes: Fresh Greens for Dinner. Go Green and get healthy! You can find all the recipes and tips on the Diabetic Living Online website. http://www.diabeticlivingonline.com/
Diabetic Recipes: Fresh Greens for Dinner
Great greens are here! Our five delicious picks can boost nutrition as part of your diabetes meal plan.
Greens for Dinner
Seeing more green at the grocery store? The early-spring supply of fresh greens is here! Pick some up to add color, flavor, and a ton of nutrition to your meals......
Watercress
This delicate green typically is used in salads to add a hint of peppery tang, and it is sometimes used more like an herb than a salad green. The thin stalks and small, round leaves contain a lot of sulfur, which helps purify the blood and build healthy skin and hair cells. Try it in sandwiches and casseroles......
Bold Watercress and Pancetta-Apple Salad
Fresh watercress provides a colorful platform for a savory arrangement of quickly cooked pork, pancetta, and apples. Homemade candied pecans make a sweet garnish (use a brown sugar substitute to reduce the amount of sugar needed).....

Kitchen Hint of the Day!
Tomato stains....
Plastic containers are perfect for keeping leftovers and sauces, but tomato sauce will often stain clear plastic. To keep this from happening, simply spray the container with nonstick cooking spray before pouring in tomato based sauces. To remove a plastic stain, cover the area with mustard and leave overnight.

3 Bean Turkey Chili w/ Johnny Cakes
Dinner Tonight: 3 Bean Turkey Chili w/ Johnny Cakes
Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned
Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I really enjoy this for Breakfast. Did some laundry for Mom while she was out running a couple of errands. Not a lot going on today so I got the cart out this afternoon and rode around the neighborhood and down by the lake. Mostly sunny and high near 70 degrees. Took a little siesta in the late afternoon. For dinner I got the Crock Pot out to make some 3 Bean Turkey Chili. Love using that Crock Pot, as they say "Set it and forget it".
It's been a while since I made the Turkey version of my 3 Bean Chili. Most of the time I use the Wild
Idea Buffalo, either version you can't go wrong! It’s loaded with nothing but good things. I use Jennie - O Extra Lean Ground Turkey Breast. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Red Beans), 1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Black Beans) drained and rinsed, Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 4 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste (2 cans), 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!).
To prepare it I start by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with
Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Turkey and all the seasonings and Tomato Paste, stirring often. When the Turkey has browned I add from the skillet to the liner lined Crock Pot. Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours. Then sit back and enjoy the aroma that usually starts after an hour or so of simmering! I love a thick Chili and this one works! The Jennie - O Ground Turkey combined with all those spices is a perfect match. Served it topped with Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a couple of shakes of Frank's Red Hot Sauce. Also a side of Johnny Cakes. (Recipe Below)
To prepare Johnny Cakes all you’ll need is: Pam w/ Olive Oil Non – Stick Spray, 1/4 cup Extra
Virgin Olive Oil, 1 3/4 cups Low Fat Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. To serve I placed mine on a plate and topped it with my 3 Bean Chili and Shredded Cheese. And now it’s Comfort Food Heaven! Chili and Cornbread are meant to be together! For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

Kitchen Hint of the Day!
Here's a Rice cooking hint I've never tried...
If you burned the rice, fear not! It's white bread to the rescue. Get rid of the scorched taste by placing a slice of fresh white bread on top of the rice while it's still hot, and covering it for a few minutes.
