Jennie - O Turkey Recipe of the Week - New Mexico Green Chili Turkey Burger

New Mexico Green Chili Turkey Burger
Jack up the flavor of your next meal with a juicy pepper jack turkey burger! Topped with green chilies in a honey lime sauce, this New Mexico style recipe will never get old. Give these burgers a try tonight!

INGREDIENTS
12 green chilies
2 teaspoons honey
2 teaspoons lime juice
⅓ cup mayonnaise
2 tablespoons ketchup
1 teaspoon chili powder
1 (32-ounce) package JENNIE-O® ⅓ pound Seasoned Turkey Burgers - Raised Without Antibiotics
6 brioche buns, split and toasted
6 lettuce leaves
12 tomato slices
6 red onion slices

DIRECTIONS
1)  Prepare grill for medium heat. Cook chilies on greased grill 7 to 9 minutes, turning occasionally. Remove from heat. Let stand 10 minutes. In medium bowl, combine honey and juice. Chop chilies; add to honey mixture. Stir to combine.
2) In small bowl, combine mayonnaise, ketchup and chili powder; set aside in refrigerator.
3) Cook patties according to package directions. Always cook until well done, 165°F as measured by meat thermometer.
4) Spread mayonnaise mixture onto top and bottom of each bun. Top bottom halves with lettuce, patties, tomato, onion and green chili mixture. Cover with bun top.
* Always cook to an internal temperature of 165°F.

Sunday's Chicken Dinner Recipe - Spicy Cuban Rotisserie Chicken

This week's Sunday's Chicken Dinner Recipe is - Spicy Cuban Rotisserie Chicken. Spice up that Chicken Dinner with this week's recipe. Spicy Cuban Rotisserie Chicken
A whole chicken is marinated several hours in a zesty Cuban-style herb and lime juice marinade and roasted on a rotisserie spit.

Recipe Ingredients:
1 large broiler-fryer whole chicken
1/4 cup fresh lime juice
3 tablespoons olive oil
1 shallot, minced
2 large cloves garlic, minced
1 teaspoon grated lime peel
2 teaspoons dried oregano
1 teaspoon salt
1 teaspoon ground cumin
1/4 teaspoon ground black pepper
Cilantro sprigs for garnish
Lime wedges for accompaniment

Cooking Directions:
1 - Truss chicken or tie drumsticks together.
2 - In large glass bowl, mix together lime juice, olive oil, shallot, garlic, lime peel, oregano, salt, cumin and pepper. Place chicken in mixture, turning to coat completely. Cover and refrigerate several hours or overnight, turning chicken several times.
3 - At cooking time, pour off marinade and place chicken on rotisserie spit. Cook about 1 1/2 hours or until drumsticks move easily in their sockets and juices run clear. When done, a meat thermometer inserted into the thigh will register 180°F (85°C). Remove chicken from rotisserie and place on rack; let sit about 10 minutes.
4 - Transfer chicken to platter and discard strings. Garnish with cilantro sprigs and serve with lime wedges.

CHICKEN SOUP WITH LIME AND CILANTRO

Ingredients

1 quart Homemade Chicken Broth or canned reduced-sodium chicken broth
1 whole chicken breast, skinned, boned, and split, or 2 skinless, boneless breast halves (about 3/4 pound)
3 tablespoons fresh lime juice
1/4 cup coarsely cilantro leaves

Directions

1 - Bring the broth to a simmer in a large saucepan.
2 - Add the chicken; cover and simmer over low heat until it is just cooked through, about 8 to 10 minutes.
3 - Remove and shred the chicken. Return it to the broth; add the lime juice and bring the soup to a boil.
4 - Ladle into soup bowls; sprinkle with cilantro.

Recipe Yield: Yield: 5 cups Serving size: 1 cup

Tropical Turkey Salad

I came across a delicious sounding Salad Recipe that I'm passing along, Tropical Turkey Salad. It's from the Jennie- O Turkey website and uses one of my favorites, JENNIE-O® Savory Roast Turkey Breast Tenderloin. We have these often and the whole family loves them! Tropical Turkey Salad

This is a Gluten Free Recipe.

A taste of the tropics, right in your salad bowl. Enjoy fresh lime and pomegranate juice drizzled over avocado, julienned jicama and grilled turkey tenderloins. This recipe has gluten free.

INGREDIENTS
3 tablespoons pomegranate juice
3 tablespoons lime juice
1 packet sugar substitute
¼ teaspoon jerk seasoning blend
1 tablespoon olive oil
1 (24-ounce) package JENNIE-O® Savory Roast Turkey Breast Tenderloin
1½ cups julienned jicama
1 ripe avocado, pitted
1 small red onion, cut into thin wedges
8 cups mixed salad greens
cilantro sprigs, if desired

DIRECTIONS
1) In small bowl, combine pomegranate juice, lime juice, sugar, seasoning and oil; whisk until well combined. Set aside.
2) Grill turkey according to package directions. Always cook to well-done, 165°F as measured by a meat thermometer. Cut into strips.
3) In large bowl, combine jicama, avocado, turkey, onion, salad greens and dressing. Toss to combine. Garnish with cilantro, if desired.
* Always cook to an internal temperature of 165°F.

Diabetic Dish of the Week - Jamaican Curried Rice

Jamaican Curried Rice
This zesty flavored rice dish combines cooked rice with black beans, red pepper, onions and pineapple. Lime juice and curry get your attention and add that great island taste.

Recipe Ingredients:
2 teaspoons olive oil
1 cup diced red bell pepper
1/2 cup sliced green onions
2 tablespoons curry powder
3 cups hot cooked rice
1/4 cup Equal® Spoonful*
2 tablespoons lime juice
1/2 teaspoon salt
1 (20-ounce) can pineapple chunks, drained
1 (15-ounce) can black beans, rinsed and drained
1/2 cup salted cashews

Cooking Directions:
1 - Heat oil in medium skillet. Cook and stir bell pepper and onions 2 to 3 minutes. Add curry powder; stir 30 seconds.
2 - Combine cooked rice, Equal®, lime juice and salt in medium-size bowl. Stir in cooked vegetable mixture, pineapple and black beans. Rice may be served warm or at room temperature. Sprinkle with cashews just before serving.
Makes 8 servings.

*May substitute 6 packets Equal sweetener
