BUFFALO TORTILLA SOUP
This traditional Mexican soup takes on a whole new “el yumo” taste with our easy to use, heat and eat Pulled Buffalo Chuck Roast. My recipe is simple, but I promise it will not disappoint! I do have one warning though, when making the tortilla strips, be sure to have celery sticks close at hand to try to keep you from eating all of the hot, limed & salted crispy strips! No guarantee's on that though. *Recipe can easily be halved.

Ingredients:
1 - 1 pound, Heat & Eat Wild Idea Buffalo Pulled Chuck Roast
½ - cup coconut oil, or other oil
10 - corn tortillas, 4 - cut into strips & 6 - quartered
2 - onions, coarse chopped
8 - whole garlic cloves, peeled
2 - whole dried pasilla chiles, de-stemmed, seeded, and coarse chopped
1 - tablespoon cumin
1 - teaspoon coriander
1 - teaspoon cardamom
1 - teaspoon salt
1 - quart tomatoes (blackened, or canned)
2 - quarts organic chicken broth
1 - lime, halved

Toppings:
1 to 2 - avocado, peeled, seeded, and chopped
4 - ounces Queso Chihuahua, shredded
½ - cup cilantro, chopped
1 - lime, cut into wedges

Preparation:

1 - In a medium saucepan, heat oil over medium high heat.
2 - Add ¼ of the tortillas strips and fry until crispy, about 3 minutes. Remove from oil and place on a brown bag, sprinkle with salt and a squeeze of lime. Repeat until all of the strips are cooked.
3 - Transfer 1 tablespoon of the oil used to fry tortillas into a soup pot, over medium high heat.
4 - Add the onions, garlic, chilies, and seasonings to the pot. Allow vegetables to lightly brown, stirring occassionally.
5 - Add the tomatoes, broth, and remaining 6 tortillas and bring to a boil. Reduce heat to medium-low and cook for about one hour.
6 - Remove from heat and let set for half an hour.
7 - Transfer the soup to a blender in batches and mix until smooth. Return soup to medium high heat and bring to a gentle boil.
8 - Add the two packages of the Pulled Buffalo Chuck Roast and and stir to incorporate. Heat for 5 minutes, then stir in the juice of half of a fresh lime and season to taste.
9 - To serve, ladle soup into bowls, top with crispy tortillas strips, avocado, grated cheese, and fresh cilantro. Accompany with fresh lime wedges.

Kitchen Hint of the Day!

Potato storage...................

It's best to purchase potatoes in bulk bins - not in bags, which make it hard to determine which are bruised. If you store fresh ginger with potatoes it will help keep them fresh longer. Half an apple stored with potatoes will stop the sprouting by absorbing moisture before the potato does.

Roasted Applewood Smoked Turkey Breast Tenderloin w/ Bacon and Ranch Red Potatoes.....

Dinner Tonight: Roasted Applewood Smoked Turkey Breast Tenderloin w/ Bacon and Ranch Red Potatoes, Mixed Chili Beans, and Baked Garlic Loaf Bread

For Breakfast this morning I prepared a Poached Egg and served it on a toasted Healthy Life Whole Grain English Muffin. I also had a cup of Bigelow Decaf Green Tea. Well another rainy day out
again. Rain Showers and 59 degrees. Beats Cold and Snow, I'm just looking for something positive! We have had a lot rain. After Breakfast I started a couple of loads of laundry. Then cleaned the house, dusted and vacuumed. For Dinner tonight I prepared a Roasted Applewood Smoked Turkey Breast Tenderloin w/ Bacon and Ranch Red Potatoes, Mixed Chili Beans, and Baked Garlic Loaf Bread. We took Dad a plate of this for his Dinner at the Retirement Center

I had purchased the Jennie – O Applewood Smoke Flavor Turkey Breast Tenderloin from Meijer and had it in the freezer. Sat it in fridge to thaw overnight. Meijer is the only store that carries this and most of the other Jennie – O Turkey Products. The Turkey Tenderloin comes pre-seasoned and is 100 calories, 4 carbs, and 99% fat free. Besides this beautiful Tenderloin all I’ll need to prepare it is some McCormick Grinders of Sea Salt and Peppercorn Medley, Blackberry Glaze, and Extra Light Olive Oil. To make the Blackberry Glaze I’ll need Smucker’s Sugarless Blackberry Jam, Red Wine Vinegar, Splenda Sugar, and Ground Cinnamon.

First I mixed my Blackberry Glaze and set it aside until ready to use. I left the recipe for this at the end of the post. To prepare the Tenderloin I’ll be baking it. Preheat the oven to 350°F. Next sprayed a shallow baking pan with Pam Non Stick Cooking Spray and add a tablespoon of the Extra Light Olive Oil to it. Then place the Tenderloins in the baking pan. With about 10 minutes of cooking time left I Glazed on of the Tenderloins. Bake until meat thermometer inserted into thickest portion of the meat reaches 165°F, approximately 62 minutes. Remove from the oven, cover and let rest 5-10 minutes before slicing.

Started slicing it and it’s so very tender and moist. It has a fantastic taste. The Applewood Smoke and combination of Spices it was marinated in was perfect! Good job Jennie- O. For the added Blackberry Glaze , it was perfect! It went with the Turkey perfectly.

For one side I prepared a box of the Idahoan Steakhouse Bacon and Ranch Red Potatoes. As all the Idahoan Potato Products it's easy to prepare and delicious! To prepare it; In 1 1/2 qt casserole dish, combine potatoes, contents of sauce pouch, 2 Tbsp butter, and 1 3/4 cups boiling water. Next add 3/4 cup milk and stir to combine. Bake uncovered at 425°F for 30 minutes. Sprinkle bacon on top of potatoes. Let stand 5 minutes, then serve! I've had these a couple of times now and love them. Good Potato Dish to go with about anything.

For another side I prepared a can of Bush’s Mixed Chili Beans – Kidney and Pinto Beans in Mild Chili Sauce. These are fairly new and as all the Bush’s Bean Products Delicious! For me you just
can’t beat Bush’s Beans. I’ve prepared these a couple of times now and really like them, nice combo using the Kidney and Pinto Beans. To prepare them just empty the Beans into a small sauce pan. Cover and heat to a simmer. Done! Being new they are sort of hard to find. The only store I have found them is Meijer so far. I had also baked a loaf of RiverRoad Bake House Garlic Oval Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Jennie – O Applewood Smoke Flavor Turkey Breast Tenderloin

JENNIE-O® Applewood Smoked Turkey Breast Tenderloin is a savory combination of flavor and ease. It comes pre-seasoned so you don’t have to marinate. And it’s 99% fat free and gluten free. Grill up a turkey breast tenderloin at your next barbeque!
