Seasoned Gulf Coast Grouper, Baked Clam Strips, and Harvest Vegetables

Dinner Tonight: Seasoned Gulf Coast Grouper, Baked Clam Strips, and Harvest Vegetables

For Breakfast on this second day of 2017 I'm having a toasted Healthy Life Whole Grain English
Muffin, topped with Smucker's Sugarfree Blackberry Jam, and as every morning, a cup of Bigelow Decaf Green Tea. After Breakfast and the morning workout I headed off to Meijer. They had several sale items that we use so I went to cash in on them and I also needed to pick up a couple of packages of Jennie - O Extra Lean Ground Turkey Breast, I'm making some 3 Bean Turkey Chili sometime this week. Not a bad at all out here today, cloudy but 54 degrees! Back home I did some light cleaning around the house. For Dinner tonight its Seasoned Gulf Coast Grouper, Baked Clam Strips, and Harvest Vegetables.

I love Fish and Seafood, especially this Florida Gulf Coast Grouper my friends keep bringing me
back up from Florida! I had a fillet of it in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 minutes per side until golden brown. Grouper is so meaty and flavorful. Love Fish, Love Seafood!

I used a box of SeaPak Clam Strips. Preheat the oven on 400 degrees. I then lined a baking sheet with foil and sprayed it with a shot of Pam Cooking Spray. Placed the Clam Strips in a single layer on the sheet and baked them for 12 minutes, flipping them over after 7 minutes. These come out so delicious. Love these, very meaty strips, well seasoned, and easy to prepare. Had a side of McCormick’s Tarter Sauce, for dipping.

Then for a side I prepared a package of Pict’sweet Harvest Vegetables with Roasted Red Potatoes and Herb and Garlic Seasoning. Another item that’s easy to prepare. Just microwave them in their steamable bag they come in on high for 5 minutes an d you have some steaming hot delicious vegetables. Pict’sweet has several different vegetable products but this is my favorite. It contains sugar snap peas, carrots and robust roasted red potatoes in a garlic seasoning.

Grouper – Firm texture, white meat with large flake and a mild flavor. Extra lean fish.

Clam Strips and Baked Fries

Dinner Tonight: Clam Strips and Baked Fries

It's just been one of those days where nothing seemed to workout and everything going wrong.
Without going into details, was having problems trying to take care of my Dad again. Then I have a new Hoveround Chair that's basically  my legs here in the house. Life would be so difficult without it. But I just got this new version of the chair and it was not designed for people that are disabled in mind. So I spent quite a while on the phone with Hoveround, expressing my displeasure over the chair. They are going to send a repairman out to help me out and correct the problem, probably be a week or so. All right enough ranting, time for dinner! Tonight I prepared Clam Strips and Baked Fries.

After the day I've had today I wanted something very easy to prepare, but still a good meal. So what
be easier than baking everything, Clam Strips and Baked Fries! Had a side of McCormick's Tarter Sauce, for dipping. Great product to have in the freezer for those days where you want something easy to prepare.

For a side I baked some Ore Ida Steak Fries. Seasoned these with Sea Salt and Ground Black Pepper, with a side of Hunt's Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Clam Strips and Pop Corn Shrimp w/ Caribbean Rice

Dinner Tonight: Clam Strips and Pop Corn Shrimp w/ Caribbean Rice

It's been one of those gloomy and cold Winter's Day out today. Caught up on housework and a load of laundry. Went to Walgreen's for Mom and that was my day. Ran my new cordless sweeper and it works fantastic! Having not to deal with the cord issue makes it's easy to vacuum. Rummaged through the freezer and found a couple of items that sounded good for dinner tonight. Tonight I prepared Clam Strips and Pop Corn Shrimp w/ Caribbean Rice.

For the Clam Strips and Shrimp I used Seapak Clam Strips and Seapak Popcorn Shrimp. Both come frozen and breaded. Just bake the Clam Strips at 425 degrees for about 17 minutes and the Shrimp on 450 degrees for 11 minutes. Both come out hot and delicious, Seapak has always been one of the best in Frozen Seafood.

Then for the Caribbean Rice I used a box of Zatarain's Caribbean Rice Mix. First time using this but as all Zatarain's Products they're easy it's easy to prepare with spot on flavors. To prepare it start by mixing 2 cups water, Rice Mix and 1 tbsp. butter or margarine (optional) in 2-quart saucepan until well blended. Bring to boil. Reduce heat to low. Cover. Then simmered for about another 22 minutes, until the rice was tender. Remove it the from heat. Let stand 5 minutes. Fluff with fork before serving and done! Wow, a perfect blend of sweet pineapple and the coconut with the vegetables and just the right amount of curry and the other spices. Found another new one for the Pantry! To serve I made a bed of the Caribbean Rice and topped it with the Clam strips and Popcorn Shrimp. This turned out to be one winning dish! Looking for a new Seafood Dish, you got to try this one out! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.
