Portobello Mushrooms, Love those mushrooms..................
Portobello Mushrooms offer three important B-complex vitamins: riboflavin for maintaining healthy red blood cells; niacin for supple skin and properly functioning digestive and nervous systems; and pantothenic acid, which aids in the release of energy from the fat, protein, and carbohydrates in the food you eat. Just one cup of mushrooms has the potential to release at least 15 different vitamins, minerals, and phytonutrients. Plus a single Portobello contains more potassium than a banana.

Kitchen Hint of the Day!
Try some of these tips when preparing your favorite home-cooked meals to make them lower in fat and more healthful.....
* To mimic the flavor and creaminess of sour cream, use buttermilk instead. It's as low in calories and fat as 1-percent milk.
* Sauté food in a non-stick pan using water, broth, juice, wine, or cooking spray.
* Stir fry meat and vegetables in a non-stick pan or wok using broth or a dab of olive or canola oil.
* Use Canadian-style bacon. Ounce for ounce, it has 116 fewer calories than regular bacon.
* Bake foods using non-fat marinades to retain moisture.

Kitchen Hint of the Day!
If you saute with butter, be sure you use the unsalted kind. When salted butter melts, the salt can separate from the butter and impart a bitter taste to the dish.

Thank you to Delores for passing this tip along!
Don't overcrowd the pan when you're sauteing — it'll make your food steam instead.

Kitchen Hint of the Day!
Saute vegetables in broth instead of butter or oil. It's healthier, and you'll have crispy, seasoned vegetables without using heated, oxidized oil (which can cause free-radical damage in the body). Pour in just enough broth to cover the bottom of the pan, and cook, lid on, until tender.

Kitchen Hint of the Day!
Watching those calories and carbs, Use non-stick cookware so that you don't have to use as much, if any, fat. When sauteing, use a small amount of chicken broth or wine instead of butter or oil.
