“Not So Sloppy” Buffalo Joes Sliders w/ Baked Fries

Dinner Tonight: “Not So Sloppy” Buffalo Joes Sliders w/ Baked Fries






For Breakfast this morning something a little different, Wild Boar Bacon! I had ordered some from
SayersBrook Bison Ranch and just received my order yesterday afternoon. Couldn't wait to try it so I'm having it now. The slices were not as long as most Bacon Slices, but it made no difference. It fried up as normal Bacon and tasted great! Wild Boar Bacon has a richer taste and is leaner than Pork Bacon. Really enjoyed this and will have it again. Along with the Bacon I prepared some Simply Potatoes Shredded Hash Browns, toasted a slice of Healthy Life Whole Grain Bread, and my usual cup of Bigelow Decaf Green Tea.





After Breakfast did a few chores around the house and finished up a load of laundry for Mom. Then after Lunch I went out to the shed and pulled out the rest of the deck furniture and cleaned it up. Rain moved back in again, a high in the 60's. For dinner tonight I prepared “Not So Sloppy” Buffalo Joes Sliders w/ Baked Fries.











It’s Sloppy Joe Night tonight for dinner! A delicious and a super easy meal to make. To make the Sloppy Joes I used a 1 lb. package of Wild Idea Buffalo Ground Round, 1 jar of Hormel Not So Sloppy Joe Sauce, and Kroger Lite Wheat Buns. Using Buffalo, or Bison, instead of Beef will give your Sloppy Joe a deeper and richer flavor. Really looking forward to tonight's Dinner, been a while since I've had these!





Using a large skillet to brown the Buffalo in I seasoned it with Morton’s Salt Substitute, Ground
Black Pepper, and Roasted Ground Cumin. After the Buffalo was browned and no longer pink I added the jar of Not So Sloppy Joe Sauce stirring and making sure the Sauce and Buffalo was well mixed. Simmer until it’s warm, and served. I love the Hormel Not So Sloppy Joe Sauce. It’s a good thick sauce well seasoned with Spices, Onions, Green Peppers among other ingredients (70 calories and 15 carbs per serving). I served them this time on Kroger 100% Whole Wheat Sliders Mini Buns. Sloppy Joes make a perfect Slider! Another delicious dish using Wild Idea Buffalo.




For a side I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Smart Pop - Pop Corn.

Buffalo Cheese Burger w/ Baked Fries

Dinner Tonight: Buffalo Cheese Burger w/ Baked Fries




For Breakfast this morning I prepared a Breakfast Sandwich. I toasted a Healthy Life Whole Grain
English Muffin and topped it with Boar's Head Sliced Deluxe Ham and a 1/2 slice of Kraft Sliced Sharp Cheddar Cheese. After Breakfast did the usual cleaning for the day, inside and outside. Outside another hot and humid day, seems to be the norm anymore. Kicked back the rest of the afternoon and watched a few programs I had recorded. For Dinner tonight I had my favorite, Buffalo Cheese Burger w/ Baked Fries.






Had my favorite Burger, the Wild Idea Buffalo 1/3 lb. Buffalo Burger. I had a package of them in the
freezer so I grabbed one and let it thaw overnight in the fridge. To prepare it I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it in Extra Virgin Olive Oil about 4 minutes per side. Buffalo gets done rather quickly due to it’s so lean. I topped it with a slice of Kraft Sharp Cheddar Cheese and served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun. Just love these Burgers, and combine it with Fries and this my Comfort Food meal!







Then for a side I baked some Alexia 98% Fat Free Roasted Straight Cut Fries with Sea Salt. I'm such a Potato Freak, I could have Fries or some type of Potato Dish every day. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 18 minutes. They bake up beautifully and seasoned just right, excellent Fries! Plus they are only 100 calories and 18 net carbs. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Buffalo Ranch Pulled Chicken Sandwich w/ Baked Fries

Today's Menu: Buffalo Ranch Pulled Chicken Sandwich w/ Baked Fries





For Breakfast I made a Breakfast Sandwich, I had this yesterday and it was so good I had to have another! I toasted a Healthy Life Whole Grain English Muffin, fried up some Boar's Head Deluxe Ham, and topped the Ham with a slice of Sargento Ultra Thin Swiss Cheese. And as always my
morning cup of Bigelow Decaf Green Tea. After Breakfast I headed out to Walmart. If you rely on Electric Carts, like myself, when going to Walmart you have to go early to assure you get a cart that works or even get one before the few that they have are all gone! Picked up some Bigelow Tea and a few items in the hardware and yard sections. Stopped Kroger to pick up a Rotisserie Whole Roaster from the Deli. Plus I wanted to early and get back home before the heat and humidity kicks in along with passing showers. Got the cart out and finished off some yard work in between rain showers. We really need the rain, everything is too dry around the area. So for Dinner tonight its a Buffalo Ranch Pulled Chicken Sandwich w/ Baked Fries.



To make Dinner tonight I'll need the Pulled Chicken from a Simple Truth Rotisserie Whole Roaster, Sargento Ultra Thin Swiss Cheese, Hidden Valley Buffalo Ranch Dressing, and Aunt Millie's Reduced Calorie Whole Grain Hamburger Bun.










As I said I had purchased a Simple Truth Rotisserie Whole Roaster from the Kroger Deli earlier today. Love these Simple Truth Roasters, delicious and twice the size than most Deli Rotisserie Whole Roasters. The first thing I did was pull all the Chicken Meat; removing the skin and any
bones. Put the Chicken in a bowl and set aside. I then grabbed a small skillet and heated it on medium heat. Added just enough of the Pulled Chicken to make the Sandwich. As the Chicken was heating I piled it up in the skillet and topped it with a slice of Swiss Cheese. As it melted I removed it from the skillet to the Bun. Topped it with Hidden Valley Buffalo Ranch, and done! The Hidden Valley Buffalo Ranch is a new item out, and it's fantastic! Creamy with nice heat, another item to keep in stock! The sandwich turned out a winner. Chicken, Swiss and the Dressing are a great trio. I left more info on Hidden Valley Buffalo Ranch at the end of the post, give it a try!








To go with the Sandwich I baked some Alexia 98% Fat Free Roasted Straight Cut Fries with Sea Salt. To prepare them I baked them at 425 degrees for 17 minutes. They bake up beautifully and seasoned just right, another excellent Fry from Alexia! For Dessert later a Weight Watcher's Cookies and Cream Ice Cream Bar.
