Fried Shrimp w/ Potato Pancakes and Mini Ears of Sweet Corn

Dinner Tonight: Fried Shrimp w/ Potato Pancakes and Mini Ears of Sweet Corn

For Breakfast this morning I had a bowl of Cheerios's. I also had my morning cup of of Bigelow
Decaf Green Tea. Cereal was a nice change of pace. Long night last night as some bad storms moved in and I was dealing with the Phantom Pains . The Phantom Pains started last night and continued though out the day! Tired and not in the best mood, the Phantom Pains have got the best of me. It rained and then it rained and today its raining! We have a lot of rain with more on the way they say. Some local flooding in the area. Did a few things around the house and then tried to catch up on some sleep. For Dinner tonight its Fried Shrimp w/ Potato Pancakes and Mini Ears of Sweet Corn.

While at Kroger yesterday I picked up more of the huge Freshwater Shrimp. My family absolutely love these Shrimp! I rinsed them off in cold water and removed the shells, they were already deveined. To prepare these I’m using McCormick Golden Dipt Cracker Meal Seafood Fry Mix.

Poured about 1 inch of olive oil into large skillet. Heat oil to 350°F on medium heat. I then took a 1/2 cup of the Cracker Meal Mix in a Hefty Zip Lock Plastic Bag. Take the peeled shrimp, 3 at a time and place them in the bag and shake until Shrimp had a nice coating on them. Had all the Shrimp coated I then began to fry them. Frying them about 3 minutes the shrimp, a few pieces at a time, in the hot oil until light golden brown turning after 1 1/2 minutes. Drain on paper towel lined plate . The McCormick Cracker Meal Mix was excellent! Nice crunch and seasoning!

Mom has been wanting some of these Potato Pancakes for a wile now. So I promised her that I would make some tonight, and I always keep my promise to Mom! So for a side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes).

I also boiled some Green Giant Mini Ears of Sweet Corn. If you’ve never tried the Green Giant Corn you need to! It’s frozen Mini Ears of sweet Corn and you just boil for 10 minutes and you have some of the Sweetest Corn you can find! For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Ingredients for Corned Brisket:

1 - Wild Idea Corned Buffalo Brisket, with package juices and seasonings
½ to 1 - bottle beer (avoid stout or dark beer)

Instructions:

1 - In a heavy pan over medium high heat, add beer and package contents.
2 - Bring to a boil, cover and reduce heat to low and allow to heat through. About 7 minutes.
3 -Transfer Corned Brisket to cutting board and pull apart in pieces or slice.

Colcannon (Irish mashed potatoes with cabbage or kale.)
A great twist on your standard mashed potatoes and a great way to get some extra veggies in. Note: I used both cabbage & kale for a greener outcome and I also pureed a second time in my smoothie blender, which produced green potatoes. If you do not puree greens twice, your potatoes will be a very pale green with pieces of vegetables, which is equally delicious and pretty.

Colcannon Ingredients:

2 - lbs. butter potatoes or golden potatoes, washed

½ - lb. cabbage or kale, sliced
¼ - cup parsley sprigs

4 - green onions, chopped

½ - cup hot milk

3 - tablespoons butter
, melted, plus more for serving
2 - teaspoon salt
1 - teaspoon black pepper
water
salt

Preparation:

1 - Place potatoes in pot of boiling water and simmer until fork tender, about 30 minutes. Drain all
but 1 inch of water from the pot and continue to cook uncovered until water is gone and pan bottom is dry.
2 - Allow the potatoes to cool a bit for easy handling and then pull the skins off the cooked potatoes while they are still warm.
3 - While potatoes are cooking, in another pot, bring about 2 cups of salted water to a boil. Add cabbage or kale, cover and simmer until tender. About 5 minutes. Add parsley and green onions and continue to simmer for two minutes.
4 - Drain vegetables in a colander. Press vegetables with the back of a spoon to release water. Place cabbage mixture in blender or food processor with ¼ cup hot milk and process until finely chopped.
5 - Place the potatoes in a mixing bowl and mash with a potato masher. Then add ¼ cup hot milk, melted butter, salt and pepper, and mix until fluffy.
6 - Add the cabbage puree and mix until just incorporated. Reheat if needed before serving. Pass with extra butter.

Kitchen Hint of the Day!

The Rule of Thumb.....

This hint is simple one, but incredibly useful. When you shape your burgers, use your thumb to make an indent in the top. That way, as the burger cooks and the juices try and escape, they'll pool in the burger and get reabsorbed, instead of running down the side and getting lost in the pan. Indenting the burger always makes the patty a better shape; as the meat contracts it will even out into a flat patty. Burger on!
