Wild Idea Buffalo Recipe of the Week - Layered Nachos

This week's Wild Idea Buffalo Recipe of the Week is Layered Nachos. Kick the Nachos up a couple notches on the flavor table with these Ncahos. You'll be using Wild Idea Buffalo Shank or Ground Buffalo, either way you can't go wrong! You can find this recipe and purchase any of the Wild Idea Buffalo Cuts of Meat on the Wild Idea Buffalo website.  http://wildideabuffalo.com/

Layered Nachos

This layered meaty, cheesy concoction, loaded with veggies, is irresistible. I like to make this dish using the shank meat from my homemade stock recipe, but it could also be made with leftover braised chuck roast, or with ground meat. (Serves 4)

Ingredients:

Buffalo Shank meat from the Buffalo Stock recipe. I usually get about 1½ pounds of meat.
1 - tablespoon olive oil
2 - teaspoons chili powder
2 - teaspoons cumin
1½ - teaspoons salt
1 - teaspoon black pepper
1 - teaspoon garlic powder
1 - teaspoon oregano
1 - teaspoon smoked paprika
½ - teaspoon coriander
8 - ounces Colby cheese, shredded
1 - can black beans, rinsed & drained
1 - cup chopped tomatoes
1 - bell pepper, diced
3 - green onions, diced
1 - avocado, chopped, reserve a little for garnish
½ - cup chopped cilantro leaves, reserve a little for garnish
Corn Chips, thicker style
Lime wedges

Preparation:

1 - In sauté pan over medium high heat, heat oil. Add shredded shank meat and all of the spices, stirring to incorporate. Bring to full heat.
2 - Remove pan from heat, cover the meat, and set aside.
3 - Pre-heat oven to 400°.
4 - Shred your cheese and prep all of your vegetables.
5 - On 4 oven safe plates, arrange a layer of corn chips. Top chips with 1/3 of meat, and other ingredients divided between the 4 plates. Repeat layer two more times.
6 - Place prepared nachos in the oven for about 10 minutes or until the cheese is melted.
7 - Remove the nachos from the oven and place on a heat resistant surface, and allow nachos to cool slightly before serving.
8 - Top with reserved avocado and cilantro and serve with fresh lime wedges and desired condiments

3.5 LBS. BUFFALO SHANKS

Bison bone-in shanks are great for the traditional Italian dish “Osso Buco”. The marrow is also coveted as a delicacy and is wonderful on toast points. The shank is cut from the leg portion of the bison. Four bone in shanks / 3.5 lbs.

Turkey & Leek Shepherd's Pie
The mashed potato-covered shepherd's pie was originally created to use up the leftovers from a festive roast. This version blends peas, leeks and carrots with diced turkey, all in a creamy herb sauce. The dish is a perfect way to create a second meal with the holiday turkey but if you like, use leftover roast chicken, duck or goose.....

Seafood Chowder Casserole
New England seafood chowder inspired the flavors here, but we’ve enhanced them further with Gruyère cheese and a crispy crumb topping. We like the combination of shrimp, cod and crab, but feel free to experiment with other types of seafood—scallops, clams and mahi-mahi would also work well......

Chicken “Carne” Adovada
Here we braise chicken thighs in a brick-red chile sauce. This dish is even tastier the next day. Serve with flour tortillas and, though it’s not traditional, we like the contrast of creamy avocado with it........

Kitchen Hint of the Day!

Red, White, and Yellow......

Yellow and White Onions can be kept for a longer amount of time than Red ones, as they have a lower sugar content. Store in an open space that's cool and dry, and away from bright light, which can make them bitter. Don't store them anywhere that may become damp.

Buffalo Burger Pattie Melt w/ Baked Crinkle Fries

Dinner Tonight: Buffalo Burger Pattie Melt w/ Baked Crinkle Fries

I had a Simple Life Turkey Sausage Breakfast sandwich to start my morning off. I purchased a
couple of new cell phones, one for my Mom and one for myself. Charged everything up and had the old ones turned off and the new ones activated. I had my cellphone since 2005 so it was time for a new one! Went outside and got the leaf blower out, tons of leaves and small limbs. We have a patch of woods behind us and the local utility company is tearing it all out so they can install new lines. Shame, the woods provided a good buffer for storms and kept the evening sun off the back of the house. So for dinner tonight I prepared one of my favorites, Buffalo Burger Pattie Melt w/ Baked Crinkle Fries.

When I use Buffalo, or Bison if you prefer, Burgers it's usually my favorite Buffalo, the Wild Idea
Buffalo 1/3-Lb Burgers. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it about 3 1/2 minutes per side, and done. After I flipped the Burger I added my Cheese on top. As my Burger was getting done I toasted 2 slices of Aunt Millie’s Whole Grain Bread and put just a dab of I Can’t Believe It’s Not Butter on both slices. I served my Buffalo Burger on the Toasted Wheat Bread and topped it with a slice of Simple Life Gouda Cheese and topped with French’s Spicy Brown Mustard. One delicious Sandwich! Anytime when I can use Buffalo I use it, it always turns out delicious!

I also baked some Ore Ida Crinkle Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt

Diet-Friendly Comfort Foods

From the EatingWell website it's Diet-Friendly Comfort Foods. Loaded Twice-Baked Potatoes and Meatloaf are two of the recipes you'll find. Check the EatingWell website for great ideas, tips, and healthy recipes.   http://www.eatingwell.com/

Diet-Friendly Comfort Foods

We've made these American classics healthier and diet friendly so that you can indulge and stay slim.
Everyone has one—that special dish that immediately makes you feel good. Unfortunately, comfort foods are notorious diet derailers: high in calories and saturated fat. But don’t despair: we’ve lightened your favorite recipes so they can fit within your calorie goals, while keeping the traditional flavors intact.

Loaded Twice-Baked Potatoes
Potatoes are one of the great comfort foods, especially when stuffed with a satisfying mixture of lean ground beef and broccoli florets plus reduced-fat sour cream and Cheddar cheese. Add a tossed salad and you have a healthy and hearty meal that will leave you feeling good........

Oven-Fried Chicken
Great news—crunchy, flavorful fried chicken can be healthy. We marinate skinless chicken in buttermilk to keep it juicy. A light coating of flour, sesame seeds and spices, misted with olive oil, forms an appealing crust during baking. And with only 7 grams of fat per serving rather than the 20 in typical fried chicken—that is good news......

Meatloaf
The addition of richly flavored dried mushrooms and the whole-grain goodness of bulgur increases the vitamins and minerals and decreases the saturated fat of this meatloaf. The loaf is free-form, rather than baked in a loaf pan, which means more delicious, browned crust. This recipe is large enough to feed a big group or, even better, have leftovers for a cold sandwich the next day.....

Kitchen Hint of the Day!

Potatoes and onions don't mix when stored together. When they are cooked together it's fine. Onions should never be stored with potatoes because moisture from the onions can cause potatoes to sprout. Onions also release gases that will alter the flavor.
