Stuffed Clams w/ Whole Grain Mac and Cheese and Baked Whole Grain Bread

Dinner Tonight: Stuffed Clams w/ Kraft 50% Whole Grain Mac and Cheese and Baked Whole Grain Bread

To start my day off I toasted a Healthy Life Whole Grain English Muffin, Scrambled some Egg
Beater's Egg Whites, fried 2 Jennie - O Turkey Breakfast Sausage Links, and had my morning cup of Bigelow Decaf Green Tea. We had a temperature record setting day here today! 76 degrees but windy and cloudy. So that's 2 days in a row we've 70 degrees or better. But that ends by Saturday morning, only a high of 39 degrees but back in the 60's by Monday. After Lunch went up and spent most of the afternoon with Dad at the rehab center. On the way back home stopped by Kroger for a couple of items for Mom. For Dinner tonight I prepared Stuffed Clams w/ Kraft 50% Whole Grain Mac and Cheese and Baked Whole Grain Bread.

For the Stuffed Clams; I purchased these at Seafood Department at Kroger. They are Matlaw Stuffed
Clams (Brand) that they have in the Seafood Case. We have these every so often now,we love them! For my Stuffed Clams I preheated the oven on 425 degrees. Lined a small baking sheet with foil and placed the Clams on it. I sprinkled some Sea Salt on them and a drizzle of Lemon Juice. When the oven was ready I baked the Clams until heated through, about 25 minutes. Meaty and seasoned just right and the Louisiana Remoulade Sauce is perfect to dip it in. Plus they are only $1 per Clam.

For side to go with the Clams I prepared some Kraft 50% Whole Grain Mac and Cheese. I normally
have the regular Mac and Cheese but I seen the 50% Whole Grain at Meijer and picked up a 4 pack of them. It comes in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! Seafood and Mac and Cheese are just a natural pairing. I also baked the other half of the LaBrea Whole Grain Loaf Bread. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Kraft Macaroni and Cheese Dinner, Whole Grain, Original Flavor

Made with 50% whole grain. 19 g of whole grain per serving (nutritionists recommend eating at least three one-ounce equivalents of whole grain products per day [about 16 g whole grain per serving or at least 48 g per day]. One serving of this product contains 19 g whole grain, approximately 39% of the minimum daily amount). Ready in 3.5 minutes. Just add water.

Seafood Fest! - Fried Freshwater Shrimp, Stuffed Clams, and Cut Green Beans w/ Potatoes

Dinner Tonight: Seafood Fest! - Fried Freshwater Shrimp, Baked Stuffed Clams, and Cut Green Beans w/ Potatoes

For Breakfast I had a Poached Egg served on a toasted Healthy Life Whole Grain English Muffin.
Also had that morning cup of Bigelow Decaf Green Tea. After Breakfast Mom drove me over to pick my car up at the car shop. Dropped it off yesterday, had the oil changed, replaced the wipers, and such. After picking that up we stopped at Jungle Jim's International Market. Love this store, you can spend all day in there, it's that big! Bought a few things at the Deli, Bakery, Meat Dept., Produce, and the Seafood Shoppe. Back home, after Lunch I headed out to see dad for a while this afternoon at the rehab center. He wasn't feeling too good today, upset stomach. Hope he comes around so he can return home soon. For Dinner tonight I made me and Mom a Seafood Fest! Tonight its Fried Freshwater Shrimp, Baked Stuffed Clams, and Cut Green Beans w/ Potatoes.

While at Kroger yesterday I picked up some of our favorite Shrimp, Freshwater Shrimp. My family absolutely love these Shrimp! I rinsed them off in cold water and removed the shells, they were already deveined. To prepare these I’m using McCormick Golden Dipt Cracker Meal Seafood Fry Mix.

Poured about 1 inch of olive oil into large skillet. Heat oil to 350°F on medium heat. I then took a 1/2 cup of the Cracker Meal Mix in a Hefty Zip Lock Plastic Bag. Take the peeled shrimp, 3 at a time and place them in the bag and shake until Shrimp had a nice coating on them. Had all the Shrimp coated I then began to fry them. Frying them about 3 minutes the shrimp, a few pieces at a time, in the hot oil until light golden brown turning after 1 1/2 minutes. Drain on paper towel lined plate . The McCormick Cracker Meal Mix was excellent! Nice crunch and seasoning!

For the Stuffed Clams; I purchased these at Seafood Department at Kroger. They are Matlaw Stuffed

Clams (Brand). We had these a while back and couldn’t wait to have them again! For my Stuffed
Clams I preheated the oven on 425 degrees. And yes, these are Parent Approved. Mom and Dad love them! Plus they are only $1 per Clam.

Then for a side I heated up a can of Del Monte Cut Green Beans and Potatoes. I really like using the
Del Monte Cut Green Beans and New Potatoes, contains 2 of my favorite vegetables (Green Beans and Potatoes). I also baked a loaf of LaBrea Whole Grain Loaf. For dessert later a Weight watcher’s Cookies and Cream Ice Cream Bar.

Giant Garlic Shrimp, Stuffed Clams, and Baked Potato

Dinner Tonight: Giant Garlic Shrimp, Stuffed Clams, and Baked Potato

For Breakfast this morning I scrambled 2 medium size Eggs and toasted 2 slices of Healthy Life
Whole Grain Bread, and the morning cup of Bigelow Decaf Green Tea. After that I headed to Meijer for a few sale items that they have this week. Stopped by the bank, stopped by Walgreen for a prescription, and stopped to get gas before returning home. Dad's blood pressure is back to normal so they didn't have to take him to the hospital for the transfusion. But he's still at the rehab center, and probably be there a while. I didn't visit him today, I stayed home and got caught up on some household chores. It's another picture perfect day out, sunny and high in the upper 60's! Did get some time in the late afternoon to get the cart out for a while to enjoy the sun. For dinner tonight something new, I prepared Giant Garlic Shrimp, Stuffed Clams, and Baked Potato.

I was at Kroger yesterday looking for some ideas for dinner this week and ended up buying a
Boneless Pork Tenderloin Roast, some Boar's Head Beef Salami and Black Forest Ham, and tonight's dinner items Extra Large Fresh Water Shrimp and Stuffed Clams. Some of the largest Shrimp I've had in quite some time and they are Fresh Water Shrimp, which I've never tried before. The Clams came already stuffed with the Clam Meat and Spices.

So for the Shrimp I'm using a recipe from My Recipes website, Giant Garlic Shrimp. To make this dish I'll need; 3 tablespoons Blue Bonnet Light Butter, Fresh Water Shrimp (peeled and deveined), 2 tablespoons minced Garlic, Juice of 1 Lemon, and 1/2 teaspoon McCormick Grinder Sea Salt and Italian Seasoning, and Parsley.

To prepare it I started by cleaning the Shrimp and  peeled and deveined them. I then melted the Butter in a large frying pan over high heat. Added the Shrimp and cooked on one side until bright pink. Turned the shrimp over and add garlic. Cooked until completely pink, about 4 to 5 minutes. Removed from the heat and added lemon juice and salt. Arranged them on a plate and drizzled them with the pan juices. Wow, nice recipe! Fantastic flavor with the Shrimp and as I had said this was the first time I tried the Fresh water Shrimp and really liked them! I think I like Wild Caught Shrimp better but these will work! Served the with some Louisiana Remoulade Sauce, perfect for my Stuffed Clams also. The original recipe and web link are at the end of the post.

For my Stuffed Clams I preheated the oven on 375 degrees. Lined a small baking sheet with foil and
placed the Clams on it. I sprinkled some Sea Salt on them and a drizzle of Lemon Juice. When the oven was ready I baked the Clams until heated through, about 12 minutes. The first Stuffed Clams I've had in forever! And they were the bomb! Meaty and seasoned just right and the Louisiana Remoulade Sauce is perfect to dip it in. I also baked a small Russet Potato that I seasoned with McCormick Grinder Sea salt and Peppercorn Medley. To drink I had a Diet Peach Snapple. For dessert later a Jello Sugar Free Dark Chocolate Pudding.
