Horseradish Turkey Burgers

I'm passing along another Jennie - O Turkey Burger recipe, Horseradish Turkey Burgers. This one is made using  2 Jennie - O products, JENNIE-O® Extra Lean Ground Turkey Breast and JENNIE-O® Sweet Italian Turkey Sausage Links. Just remove the casing from the Sausages and mix it with the Extra Lean Ground Turkey Breast and you have the makings of one delicious Burger! Also included is a recipe for the Jalapeño Mayo. Horseradish Turkey Burgers
Bored with burgers? It’s time to spice up your burger. Horseradish, Dijon and grilled jalapeño mayo brings the heat to this dinner recipe that’s under 500 calories per serving.

INGREDIENTS

Jalapeño mayo:
2 jalapeños, stemmed, halved lengthwise, seeded
¼ cup fat-free mayonnaise
1 teaspoon Dijon mustard
Burgers:
⅔ cup whole wheat panko breadcrumbs
¼ cup milk
1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
2 links JENNIE-O® Sweet Italian Turkey Sausage Links, casings removed
4 green onions, thinly sliced
2 tablespoons horseradish, drained
1 tablespoon Dijon mustard
4 reduced-calorie wheat hamburger buns, halved
¼ cup crumbled blue cheese, if desired
4 lettuce leaves

DIRECTIONS
1) Coat grill with non-stick cooking spray and place over medium-high heat. Add jalapeños, cut side down; cook 5 minutes or until charred on all sides. Remove jalapeños from grill, and place in blender or food processor. Add mayonnaise and mustard. Blend until smooth. Set aside.
2) In medium bowl, combine breadcrumbs and milk and soak 5 minutes. Add ground turkey, sausage, green onions, horseradish and mustard to crumb mixture. Mix to combine. Form meat mixture into 4 burgers. Spray grill pan or grill with non-stick spray over medium-high heat. Grill burgers 6 minutes per side. Always cook to well-done, 165°F as measured by a meat thermometer. Toast hamburger buns, cut side down 1 minute.
3) Assemble burger with jalapeño mayo on bottom bun. Add lettuce, burger, blue cheese and bun top
* Always cook to an internal temperature of 165°F.

It's Chili, Soup, or Stew Saturday....FIVE SPICE TURKEY NOODLE BOWLS

I usually have a different Prime Time Post for Saturday but with Fall here and Winter next why not feature the Fall and Winter Dish - Chili, Soup, or Stew. Any of these taste good year around but all 3 seem to taste better as the weather cools! So I'll be featuring one of these each Saturday, and there are countless recipes for any of the 3! This week's It's Chili, Soup, or Stew Saturday is a recipe for FIVE SPICE TURKEY NOODLE BOWLS. Made using the always fresh and delicious Jennie-O Extra Lean Ground Turkey Breast, which is what I always use when I'm making Turkey Chili. The dish is 290 calories and 24 net carbs per serving. FIVE SPICE TURKEY NOODLE BOWLS

Ingredients

2 teaspoons extra virgin olive oil, divided
1 (16-ounce) package Jennie-O Extra Lean Ground Turkey Breast
2 teaspoons Chinese five spice powder, divided
8 ounces fresh button or shitake mushrooms, thinly sliced
1 teaspoon minced fresh garlic
1 (32-ounce) package reduced-sodium and fat-free chicken broth
2 tablespoons sweet chili sauce
8 ounces whole wheat udon noodles or whole wheat spaghetti
1/2 cup thinly sliced green onions

Directions

1 - In skillet, heat 1 teaspoon oil over medium-high heat. Add turkey and cook as specified on the package. Always cook to well- done, 165F as measured by a meat thermometer.
2 - Add to turkey 1 teaspoon Chinese five spice powder; stir. Remove turkey from pan and set aside.
3 - In same skillet, add remaining oil. Add mushrooms and cook until softened and the liquid has evaporated.
4 - Add garlic and remaining Chinese five spice powder. Cook and stir 1 to 2 minutes or until garlic is softened and spices are fragrant.
5 - Add chicken broth, turkey and sweet chili sauce. Cook over medium heat until warmed through.
6 - Meanwhile, prepare noodles or spaghetti according to package directions.
7 - To serve, place 3/4 cup of noodles into 6 bowls. Ladle 1 cup of soup into each bowl and sprinkle with green onion slices.

Recipe Yield: Makes 6 servings

Avocado Turkey Burger

Avocado Turkey Burger
Ingredients

1/2 cup unsweetened applesauce
1 (16-ounce) package Jennie-O Extra Lean Ground Turkey Breast
2 teaspoons no-salt seasoning
5 small whole wheat buns
5 slices light Cheddar cheese
1 avocado, peeled and diced

Directions

1 - Drain applesauce in a strainer to eliminate excess liquid. Mix ground turkey, applesauce and no-salt seasoning.
2 - Form mixture into 5 patties. Cook patties according to package directions. Always cook to well-done, 165F as measured by a meat thermometer.
3 - Place burgers on bun bottoms. Top with cheese and avocado. Cover with bun top.
Always cook to an internal temperature of 165F.

Mexican Turkey Frittata

This flavorful egg and turkey frittata recipe will wake up your taste buds.
Makes 9 servings

Ingredients

1 (16-ounce) package JENNIE-O Extra Lean Ground Turkey Breast
1/4 teaspoon cumin
1 tablespoon vegetable oil
1 green bell pepper, chopped
2 cups sliced small mushrooms
1 tablespoon chipotle peppers in adobo sauce, finely chopped
3 cups egg substitute or 12 eggs
1/2 cup milk
1/4 cup chopped fresh cilantro
1 cup shredded low-fat Mexican blend cheese
1/3 cup sliced green onions

DIRECTIONS

1) Heat oven to 350°F. Mist 8 x 8-inch baking dish with cooking spray. Cook ground turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Sprinkle with cumin; stir to mix.
2) In large skillet over medium-high heat, add oil, green pepper, mushrooms and chipotle peppers. Cook 5 minutes, stirring occasionally, until mushrooms are cooked.
3) In large bowl, whisk eggs, milk and cilantro until well mixed. Stir in turkey, cheese, mushroom mixture and green onions. Spoon mixture into baking dish. Bake 30 to 40 minutes or until set.
* Always cook to an internal temperature of 165F

Jennie - O Recipe of the Week - Black Bean Turkey Chili with Bean

Black Bean Turkey Chili with Bean
This is a Gluten Free Recipe


Ingredients
1 (20-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
1 cup chopped onion
1 red bell pepper, cubed
2 cloves garlic, minced
2 jalapeño peppers, seeded and minced, if desired
1 tablespoon chili powder
1 ½ teaspoons ground cumin
1 ½ teaspoons ground coriander
½ teaspoon dried oregano leaves
½ teaspoon dried marjoram leaves
¼ teaspoon crushed red pepper flakes, if desired
2 (14 ½-ounce) cans low-sodium whole tomatoes, coarsely chopped
1 (8-ounce) can tomato sauce
1 (14 ½-ounce) can black beans, drained and rinsed
¼ cup chopped fresh cilantro
¼ cup shredded low-fat Cheddar cheese



Directions
In large stockpot, combine ground turkey, onion, bell pepper, garlic, jalapeño peppers, chili powder, cumin, coriander, oregano, marjoram and red pepper flakes. Cook turkey mixture as specified on the package. Always cook to well-done, 165°F. as measured by a meat thermometer.

Add tomatoes and tomato sauce; bring to a boil. Reduce heat and simmer, uncovered, 10 minutes, stirring occasionally. Add beans and cilantro. Cook 10 minutes longer. Top with cheese.
