Beef Pot Roast with Gravy w/ Roasted Carrots and Red Potatoes

Dinner Tonight: Beef Pot Roast with Gravy w/ Roasted Carrots and Red Potatoes

Went out to grab the Morning Papers and it is COLD out there this morning. It's 20 degrees with a
wind chill in the teens, COLD! Partly sunny and 37 degrees but the wind chill kept it at below
freezing most of the day. So for Breakfast I prepared one of my favorites, Hash Browns and Ham topped with an Egg and Cheese. I prepared some Simply Potatoes Shredded Hash Browns, topped them with some cooked diced Ham, 1 Egg Sunnyside Up, and Sargento Reduced Fat Shredded Sharp Cheddar Cheese. I also had a cup of my Bigelow Decaf Green Tea. Did a load of laundry and cleaned the house today. Then watched some Football for the rest of the afternoon. For Dinner tonight a Beef Pot Roast with Gravy w/ Roasted Carrots and Red Potatoes.

While at Costco the other day I came across a Morton's of Omaha Beef Pot Roast with Gravy. It sounded and look delicious so I bought a container of it. It's precooked so all you have to do is heat it up. There's 2 ways you can prepare it, by the microwave or by boiling the bag in water. I went with the microwave preparation. To prepare it; Remove the outer sleeve and the tray seal. Leave the reheat bag with the Beef Pot Roast in the tray. Cut 4 small holes in the top of the reheat bag for ventilation. Place the tray with the reheat bag into the microwave. Microwave on high for 10 minutes. Cut end of bag with scissors and empty into tray for serving. Very easy to prepare.

For one side I roasted some Carrots. I bought a bag of Whole Carrots from Kroger. Washed the Carrots off and then sliced them up. I grabbed a medium sized sauce pan and filed it with water.
Heated it on high bringing it to a boil. Added the sliced Carrots and boiled until almost for tender. Drained the water and set the Carrots aside. For the Potatoes I used a bag of Petite Red Gourmet Potatoes. Gave them a quick wash with water and the cut them in half. Put them in a bowl and seasoned them with McCormick Grinders of Sea Salt and Peppercorn Medley, Dried Parsley, and Extra Light Olive Oil. Mixed them in a bowl until seasoned. I had already preheated the oven on 425 degrees. I got a baking sheet and covered it with foil. Sprayed it with Pam Non Stick Cooking Spray and added a 1/2 a tablespoon of Extra Light Olive Oil. I then added the sliced Carrots and Red Potatoes to the pan. Seasoned them with Dried Rosemary and Dried Thyme then mixed them together in the pan. Put the pan in the oven and baked until fork tender.

With everything done I grabbed a large serving bowl and added the Carrots and Red Potatoes. Then I topped them with Beef Pot Roast. I saved the gravy that was with the Roast in another bowl and added that to top the Roast with when serving. This is the 1st time I tried the Morton's of Omaha Beef Pot Roast with Gravy and it was delicious! The Beef was tender and flavorful and the Gravy was seasoned just right! The Carrots and Potatoes were perfect with the Beef Roast. Fantastic Meal! For Dessert/Snack later a bowl of Skinny Pop - Pop Corn and a Diet Dr. Pepper to drink.

Cumin Spiced Pork Tenderloin w/ Roasted Red Potatoes and Cut Green Beans

Dinner Tonight: Cumin Spiced Pork Tenderloin w/ Roasted Red Potatoes and Cut Green Beans

A wee bit colder this morning, about 26 degrees and a wind chill to boot! Had a light Breakfast and then an early morning workout. I went to Meijer and Kroger then. About a mile from the house on my way to Meijer, they had a light snow on the ground. And the further away from the house the more snow! Had to make a Meijer/ Jennie - O Turkey run. Meijer has the best selection of Jennie - O Turkey in our area. Stocked up a couple of rolls of the Ground Turkey Breakfast Sausage, some Turkey Breakfast Sausage Links, and Extra Lean Ground Turkey Breast. Thank you Meijer and Jennie - O Turkey! For dinner tonight it's a Cumin Spiced Pork Tenderloin w/ Roasted Red Potatoes and Cut Green Beans.

I had come across the Cumin Spiced Pork Tenderloin recipe a while back on-line, and use it all the time now. I purchased the pork Tenderloin from Kroger, Simple Truth Natural Pork Tenderloin. To prepare it I’ll need; 1 pork Tenderloin, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. Bake at 350° for 15 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which made one incredible Crust on the Pork with the inside being tender and moist! This is my favorite Pork recipe!

For one side I prepared Roasted Red Potatoes. I put these in the oven as I started Roasting my Pork Tenderloin, same temperature of 400 degrees. Then to prepare them I needed; 1 tablespoon Extra Virgin Olive Oil, 1 tablespoon minced fresh or Dried Rosemary, 1 tablespoon Dried Thyme, 1/2 teaspoon Sea Salt, and 1/4 teaspoon Ground Black Pepper. I start by heating up a Cast Iron Skillet on medium heat and as that’s heating up quartered the Red Potatoes. Combined all ingredients in a large bowl and added the Potatoes. Toss to coat Potatoes and add them to to the Skillet. Fry them about 4-5 minutes and transfer the Skillet to the oven, for about 15 - 20 minutes until they are fork tender. This is why I love using Cast Iron Skillets, from the stove to the oven, and easy clean up. I also heated up a can of Del Monte Cut Green Beans and baked a

Baked Bone-In Whole Chicken Breast w/ Roasted Red Potatoes with Rosemary and...

Dinner Tonight: Baked Bone-In Whole Chicken Breast w/ Roasted Red Potatoes with Rosemary, Cut Green Beans, and Baked French Bread Loaf

Early rain and then sunny and a bit cooler than it's been the last couple of days, but still nice. They say we have some heavy rain and thunderstorms moving in late tonight and for the next couple of days. Dad is home from rehab, still not quite at full strength but getting there. They told him he's got to lower his Salt intake and eat a little healthier, which I've been telling my Mom and Dad that for quite some time. For dinner tonight I prepared a Baked Bone-In Whole Chicken Breast w/ Roasted Red Potatoes with Rosemary, Cut Green Beans, and Baked French Bread Loaf.

For the Chicken I used the PERDUE® OVEN READY Whole Seasoned Roaster Bone-In Breast. As it says “Oven Ready’, already seasoned, and little clean-up needed plus their always delicious. To prepare it just preheat the oven to 400ºF. Cut open outer bag and remove Oven Ready Roaster Bone-In Breast, sealed in a cooking bag. Place in a shallow roasting pan, seasoned side up. Cut one small 1″ slit in cooking bag over the breast to vent during cooking. If cooking from Fresh: Place pan with breast (still in cooking bag) on lower shelf of oven and roast for approximately 80-90 minutes, until internal temperature of the breast reaches 180ºF. Comes out piping hot, well seasoned, and delicious! Plenty leftovers for some Chicken Fajitas for lunch tomorrow.

One side I prepared was Roasted Red Potatoes with Rosemary. Love potatoes and love this recipe also! A real simple one to prepare. You’ll need 6 to 8 small red potatoes, quartered into 1/2-inch pieces, 1 tablespoon Extra Virgin Olive Oil, 1 tablespoon minced fresh rosemary leaves, 1/2 teaspoon sea salt, and 1/4 teaspoon ground black pepper. To prepare it preheat oven to 400 degrees F. Then combine all ingredients in a large bowl and toss to coat potatoes. Transfer potatoes to a large baking sheet or shallow roasting pan. Roast 25 to 30 minutes, until tender and golden. Then for another side I heated up a can of Del Monte Cut Green Beans. I also baked a loaf of, Mom's Favorite, Pillsbury Rustic French Bread. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.
