Chili and Cheese Nachos

Dinner Tonight: Chili and Cheese Nachos

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I topped with
Smucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I went to Meijer for a couple of items and then picked up Breakfast for Mom. Outside 79 degrees with rain showers. After Lunch I got the cart out and sprayed for weeds around the house and shed. Everything done, I kicked back and took a short nap. I'm not sure what's wrong, just feeling bad. Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

We love Chili and Cheese Nachos around here! To make them I’ll need: Tostitos Multi Grain Scoops
for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! Especially love the Jalapenos, nice mild heat!

To prepare I preheat the oven at 400 degrees and sprayed a glass baking dish with Pam and layer
everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. I love Nachos, nothing better than a big plate of Chili Cheese Nachos! For Dessert later a bowl of Skinny Pop – Pop Corn and an Ice Water to drink.

Turkey Meatball Mini Sub w/ Baked Fries

Dinner Tonight: Turkey Meatball Mini Sub w/ Baked Fries

To start the Sunday morning off I made some Simply Potatoes Shredded Hash Browns. Next I prepared some Ekrich Smoked Turkey Sausage Links. I also had my morning cup of Bigelow Decaf
Green Tea. After Breakfast I went to the local Kroger and picked up a few items then went to Burger King and picked up Mom and Dad’s Breakfast. They normally have McDonald's but I switched it up a bit and picked up the Burger King Breakfast items. And they really enjoyed them!  Cloudy out all day and a high of 42 degrees. Rain Showers moved in the afternoon. Cleaned the house and kept an eye on Dad while Mom was at Church. So for Dinner tonight I prepared a Turkey Meatball Mini Sub w/ Baked Fries.

I had used the Honeysuckle White Fresh Italian Style Turkey Meatballs leftover from yesterday meal. I’ve been using the Honeysuckle White Fresh Italian Style Turkey Meatballs for quite a few years now. So thank goodness Kroger finally started carrying them again! The Meatballs are good size, always fresh, meaty, and have a fantastic taste and they’re 190 calories and 5 net carbs for 3 Meatballs. Plus they’re a perfect size for Hoagie or Hot Dog Buns, I used Aunt Millie's Reduced Calorie Whole Grain Hot Dog Buns.

For my Pasta Sauce I had used the LaRosa’s Original Sauce. A local favorite and mine also, it’s got a perfect combination of a robust sauce with a hint of sweetness to it. To prepare it I took a medium size sauce pan and sprayed it with Pam Cooking Spray. Emptied the can of Sauce in the pan and turned the heat on medium. Then I added my Turkey Meatballs and covered the pan and let it simmer until both the Sauce and Meatballs were heated through.

I'm using Sargento Shredded Mozzarella Cheese as a topping for the Sub. You can use Hoagie Buns but to save on calories and carbs I usually just use Aunt Millie's Reduced Fat Whole Grain Hot Dog Buns. To assemble; open the Bun up, put the Meatballs and Sauce in the Bun , top it with a few shakes of McCormick Grinder Italian Seasoning, and top it with the Sargento Shredded Mozzarella Cheese. Love these Meatball Sandwiches! The Larosa’s Sauce just seems to bring the Sandwich together! Sauce is incredible, Turkey Meatballs flavorful and meaty, and the Mozzarella is perfect with Pasta and Sauces.

For my Fries I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.
