Crunchy Breaded Fish Sticks w/ Whole Grain Mac and Cheese

Dinner Tonight:  Crunchy Breaded Fish Sticks w/ Whole Grain Mac and Cheese

For Breakfast this morning I toasted a couple of Eggo Waffles, lightly topped with butter, and had my
morning cup of Bigelow Decaf Green Tea. Already 49 degrees this morning, warmest in a while. For the day it was mostly cloudy and a high of 70 degrees, about time! After Breakfast I went to Kroger to pick up some groceries for Mom. She was out of a lot things and dad will be home tomorrow after being gone 2 months in the hospital and rehab. Be great to have him back home. After Lunch I pulled out my mobility cart from the shed and cleaned it up. Then swept shed out. I also grabbed the leaf blower and cleaned of the deck and around the driveway. Kept it simple for Dinner tonight. I made some  Crunchy Breaded Fish Sticks w/ Whole Grain Mac and Cheese.

So it's Fish Sticks tonight! I'm using Gorton's Smart and Crunchy Breaded Fish Sticks. Growing up I
lived on Fish Sticks. When I was at Meijer the other day I seen these in the frozen foods and bought a package of them and the Gorton's Smart and Crunchy Fillets. These are coated with Panko Bread Crumbs and to prepare them I'll be baking them. I first preheated the oven at 375 degrees. I then took a small baking sheet and lined it with foil. Sprayed the foil with Pam Cooking Spray and lined the Fish Sticks up on the sheet. Then baked them for 22 minutes, flipping them over after 11 minutes.

They came out piping hot, nice crunch from the Panko Bread Crumb Coating and nicely Seasoned.I've got another great item for the freezer, a good one to have on hand. Served them with a side of McCormick Tarter Sauce.

For side to go with the Fish Sticks I prepared some Kraft 50% Whole Grain Mac and Cheese. I
normally have the regular Mac and Cheese but I seen the 50% Whole Grain at Meijer and picked up a 4 pack of them. It comes in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! Seafood and Mac and Cheese are just a natural pairing. For dessert later a Jello Sugarfree Dark Chocolate Pudding.

Open-Faced Roast Beef Sandwich w/ Mashed Potatoes, Mushroom Gravy, and Green Beans

Dinner Tonight: Open-Faced Roast Beef Sandwich w/ Mashed Potatoes, Mushroom Gravy, and Green Beans

This morning for Breakfast I had a Poached egg, 2 Jimmy Dean Turkey Sausage Links, toasted
Healthy Life Whole Grain English Muffin, and a cup of Bigelow Decaf Green Tea. A bit warmer out today and less windy, high of 57 degrees. Did a few things around the house then after Lunch went outside and got a few things out of storage from the shed. Pulled out some of the outdoor chairs and table and cleaned them up and also repaired a couple of the chairs. Back inside finished some laundry up for Mom. For Dinner tonight I prepared a  Open-Faced Roast Beef Sandwich w/ Mashed Potatoes, Mushroom Gravy, and Green Beans.

It's very seldom that I have Beef but when I was at Walmart the other day this just looked good and I
had not had this in quite some time, a package of Hormel Slow Simmered Beef Roast Au Jus. And made into an Open Face Roast Beef sounded real good! It comes packaged in a sealed microwave container and easy to prepare. Start by removing it from the outer sleeve and place the tray in microwave, do not pierce or vent film.  Heat on high for 4 minutes or until hot. the self-venting film expands as it heats, forming a bubble to lock in flavor and juiciness.  Let it stand for 2 minutes. Peel back and serve. Can't get much easier and it's really delicious. Plenty of Beef with excellent flavor. All I added was a bit Sea Salt to it. I lightly toasted a slice of Healthy Life Whole Grain Bread and served the Beef on top of the Toast. I also heated up a jar of Heinz Mushroom Gravy that I topped it with.

For a side I prepared my favorite Mashed Potatoes, Bob Evan's Mashed Potatoes. Easy to fix and delicious. To prepare it just heat it up in the microwave for 6 minutes and it’s ready. Topped them with some of the Mushroom Gravy.

I also heated up a can of Del Monte Cut Green Beans. I could have Beans every meal, love them! For Dessert later tonight I’ll be having a Weight Watcher's Cookies and Cream Ice Cream Bar.

HORMEL® Slow Simmered Beef Roast Au Jus
Enjoy a fully cooked dinner any night of the week with our Slow Simmered Beef Roast. Best of all—it’s fast and easy so you can spend more time enjoying it with your family.

Simple Ideas
For a quick and easy meal, try it in a stir-fry, atop tacos or in sandwiches!

Microwave directions
1. Remove outer sleeve and place vacuum-sealed tray in microwave. Do not pierce or vent film.
2. Heat on high for 4 minutes or until hot. Self-venting film expands as it heats, forming a bubble to lock in flavor and juiciness.
3. Let stand for 2 minutes. Peel back film carefully, as contents will be hot.
Serve and enjoy!

IF FROZEN, DOUBLE COOKING TIME.

3 Bean Turkey Chili w/ Johnny Cakes

Dinner Tonight: 3 Bean Turkey Chili w/ Johnny Cakes

For Breakfast this morning I had one of my favorites, Skillet Potatoes and Ham for Breakfast. I used
1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a Sunnyside Up Fried Egg. Just love these skillet Meals! Also had the morning cup of Bigelow Decaf Green Tea. It was house cleaning day today, vacuumed and dusted. I wanted everything looking good because I think they will be releasing Dad from rehab! He's made great progress the past week and has regained a lot of his strength. Looking forward to his return. Tonight’s Dinner, 3 Bean Turkey Chili w/ Johnny Cakes.

Rainy day outside today. Had a high of 62 degrees along with a couple of passing Thunderstorms. A good day to stay in and make some Chili!! I'm making my 3 Bean Turkey Chili for Dinner tonight! I prepared the Turkey and mixed the Beans last night. So this morning I already had the Crock Pot set up and ready along having the Turkey and Beans ready also. So its my 3 Bean Turkey Chili and I made some Johnny Cakes. For Dessert later a bowl of Del Monte No Sugar Added Diced Mangos. Below is the ingredients and cooking directions for the 3 Bean Turkey Chili and the Johnny Cakes.

To make this I’m using Jennie -O Lean Ground Turkey. The 3 Beans I use are 1 Can (16 oz.) Bush’s
Chili Beans (Black Beans), 1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) drained and rinsed, Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Seeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste (2 cans), 1/2 Tsp Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). What’s good about this recipe you can use your own favorite Spices and make your own tweaks to it and it turns out delicious.

First thing I do is get the Crock Pot out and put in a Glad Crock Pot Liner. The Liners are incredible,
just line your Crock Pot with one and spray it with Pam Cooking Spray. Now you are set to go. It makes for one easy clean up, just remove it when done and give the inside of your Crock Pot a quick wipe down and your clean up is done! On with the recipe.

I prepared the Beans and Ground Turkey last night. I started by opening all 3 cans of Bush Beans into
a large bowl and stirred until mixed. Then in the morning, I added the Beans to Crock Pot. To prepare the Turkey, I started by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Turkey and all the Seasonings and Tomato Paste, stirring often. When the Turkey has browned I put it in a large plastic container and on into the fridge after it had cooled a bit. Then this morning I added to the Crock Pot. Throw in a 1/2 cup of Water, stirred twice, and put the lid on the Crock Pot and set on low for 5-6 hours. The full recipe and list of ingredients is at the end of the post.

Then sit back and enjoy the aroma, that usually starts after an hour or so of simmering! I love a thick Chili and this one works! The Jennie – O Ground Turkey combined with all those Beans and Spices is a perfect match. Served it topped with some Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a couple of shakes of Frank’s Red Hot Sauce. Also a side of Johnny Cakes, recipe below.

To prepare the Johnny Cakes (I love these…) all you’ll need is: Pam w/ Olive Oil Non – Stick Spray, 1/4 cup Extra Light Virgin Olive Oil, 1 3/4 cups Low Fat Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. The Cornbread works perfect with Chili! I had a Diet Peach Snapple to go with my Dinner.I forgot, did I tell you how much I love this Chili!

One of America's Favorites - Coleslaw

Coleslaw (also known as cole slaw or simply slaw) is a salad consisting primarily of finely-shredded raw cabbage and dressed most commonly with a vinaigrette salad dressing. Prepared in this manner, coleslaw can be pickled for up to four weeks if it is stored in an airtight container. Another way to make coleslaw is to use foods that already contain vinaigrette: mayonnaise, for example, is commonly used.

Coleslaw is frequently served as a side dish in traditional meals in many countries, and can be seen in major fast food chains as well.

Coleslaw made with mayonnaise

There are many variations of the recipe, which include the addition of other ingredients such as red cabbage, pepper, shredded carrots, onion, grated cheese, pineapple, or apple, mixed with a salad dressing such as mayonnaise or cream. A variety of seasonings, such as celery seed, may be added. The cabbage may come in finely minced pieces, shredded strips, or small squares. Other slaw variants include broccoli slaw, which uses shredded raw broccoli in place of the cabbage. Cream, sour cream, or buttermilk are also popular additions. Buttermilk coleslaw is most commonly found in the southern United States.

In the United States, coleslaw often contains buttermilk, mayonnaise or mayonnaise substitutes, and carrot, although many regional variations exist, and recipes incorporating prepared mustard or vinegar without the dairy and mayonnaise are also common. Barbecue slaw, also known as red slaw, is made using ketchup and vinegar rather than mayonnaise. It is an essential part of "Lexington style" North Carolina barbecue.

Coleslaw is generally eaten as a side dish with foods such as fried chicken and barbecued meats and may be accompanied by French fries or potato salad as another side dish. It also may be used as a sandwich ingredient, being placed on barbecue sandwiches, hamburgers, and hot dogs along with chili and hot mustard. A vinegar-based coleslaw is the signature ingredient to a Primanti Brothers sandwich. Coleslaw also is used on a variant of the Reuben sandwich, with coleslaw substituting for the sauerkraut; the sandwich is commonly called a Rachel to differentiate it from the Reuben.

According to The Joy of Cooking (1997), raw cabbage is the only entirely consistent ingredient in coleslaw; the type of cabbage, dressing, and added ingredients vary widely. Vinaigrette, mayonnaise, and sour cream based dressings are all listed; bacon, carrots, bell peppers, pineapple, pickles, onions, and herbs are specifically mentioned as possible added ingredients.

Chicken and Wild Mushroom Ravioli

Dinner Tonight: Chicken and Wild Mushroom Ravioli

For Breakfast this morning I prepared a Poached Egg and served it on a toasted Healthy Life Whole Grain English Muffin. Also had the morning cup of Bigelow Decaf Green Tea. After Breakfast I went up to McDonald's and picked up Breakfast for Mom. Another overcast day but not as windy out and a high of 51 degrees. Finished up some cleaning today, cleaned the oven and fridge. Still having problems with my thumb, wish this would hurry up and heal! For Dinner tonight I prepared a new item, Three Bridges Wild Mushroom Ravioli. Tonight its Chicken and Wild Mushroom Ravioli.

Chicken and Wild Mushroom Ravioli for Dinner. Had this a while back and really liked it. For the
Chicken I used Perdue Perfect Portions Skinless and Boneless Chicken Breasts. I had them in the freezer so I let them thaw overnight in the fridge. I love the Perdue Perfect Portions Chicken Breasts. Always taste fresh and nice size. To prepare; removed them from the package and seasoned them with Sea Salt and Litehouse Freeze Dried Poultry Herb Blend, my favorite seasoning for Chicken. Then I sprinkled them with a light dusting of Flour. Cooked them in a medium size skillet that was sprayed with Pam Cooking Spray w/ Olive Oil and a tablespoon of Extra Light Olive Oil. Fried them on medium high heat for about 11 minutes, flipping it over 3 times. Removed from the heat and set aside. As the Chicken was cooking I sliced up some Mushrooms and Sauteed them in the skillet also. Removed from the heat and set aside. After they had cooled I sliced the Chicken Breasts up.

As the Chicken was finishing I prepared the Three Bridges Wild Mushroom Ravioli. First time preparing this and its very easy to prepare. Bring a large pot of water to a gentle boil. Add ravioli and cook for 5 minutes. Remove the pot from heat and strain the Ravioli.

Then tossed with Kraft Reduced Fat Grated Parmesan Cheese, 1 tablespoon of Light Olive Oil,  and
some Buitoni Marinara Sauce. To serve I made a bed of the Ravioli in a bowl and topped it with the sliced Chicken Breast, Sauteed Sliced Mushrooms, and a bit more of the remaining Sauce and a sprinkle of Kraft Reduced Fat Grated Parmesan Cheese. The Ravioli is very tender and a excellent Mushroom taste! The Chicken and sauce worked perfect with it. Another very good item I came across at Meijer. I'm always finding new products to try at Meijer. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.
