Dinner Tonight: 6 oz. Buffalo Cheese Burger w/ Baked Fries

I just had a cup of Bigelow Decaf Green Tea for Breakfast this morning. I had one of those Sinus
Headaches most of last night and into the early morning. So needless to say I didn't do a whole lot today. After Lunch I went and seen Dad for a while. Returned home and took an afternoon nap, feeling somewhat better. For Dinner tonight I prepared a 6 oz. Buffalo Cheese Burger w/ Baked Fries.

Last week I received my latest order from Wild Idea Buffalo. A new item that I had been wanting to try, Wild Idea Buffalo BUFF BURGERS (6-6OZ. BURGERS). Their made with premium, 95% lean, 100% grass-fed buffalo meat. All ready seasoned, handcrafted burgers into a 6 oz. portion and then wrapped individually.

Had the Burgers in the freezer so I laid one in the fridge to thaw overnight. I prepared them the usual
way I prepare Buffalo Burgers. Preheated a skillet that I sprayed with Pam Cooking Spray and 1/2 tablespoon of Extra Light Olive Oil on medium heat. I seasoned the Burger with a light sprinkle of Lite Salt and Ground Black Pepper. Then fried the Burger about 3 1/2 minutes then flipped it over and fried it another 3 1/2 minutes, I topped the Burger with a slice of Kraft Sliced Sharp Cheddar Cheese with about 1 minute left of frying time. i served the burger on a Healthy Life Whole Grain Hamburger Bun. Love these new Wild Idea Buffalo Burgers! Nicely seasoned, moist, and juicy as are all their Burgers. Really like that they are  individually wrapped also.

I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For Dessert later a Weight Watcher’s Snack Size Peanut and Caramel Ice Cream candy Bar.

Diabetic Dish of the Week - Grilled Chicken

This week's Diabetic Dish of the Week is Grilled Chicken. Easy and quick Dinner recipe, and healthy! Enjoy and Eat Healthy!

Grilled Chicken

4 skinless, boneless chicken breast halves (Perdue Perfect Portions Chicken Breasts)
1 cup fat free Italian-style dressing (Kraft Free)
1 green bell pepper
1 red bell pepper
1 zucchini
sea salt and ground pepper, to taste

1 - Place washed chicken breasts in large sealable bag. Add 1 cup fat-free Italian dressing and close. Let marinate for 5 to 10 minutes.
2 - Cut up peppers into big chunks, and zucchini into big slices. Put into another sealable bag. Coat with leftover dressing.
3 - Grill chicken and veggies over medium heat.

Creamy Chicken Pasta w/ Baked French Bread

Dinner Tonight: Creamy Chicken Pasta  w/ Baked French Bread

For Breakfast this morning I Poached an Egg and served it on a toasted Healthy Life Whole
Grain English Muffin. And as always my morning cup of Bigelow Decaf Green Tea. I prepared Mom a Scrambled Egg and toasted her some Raisin Bread. After Breakfast it house cleaning day, vacuumed and dusted. Then cleaned the fridge also. After Lunch I went and spent the day with Dad. He seems to be getting somewhat better. His appetite is back and a lot less stomach pain. They have him on light therapy until later in the week. Not a bad Winters Day out, partly sunny and 34 degrees. For Dinner tonight I'm trying a new item, Bear Creek Country Kitchens Creamy Chicken Pasta Mix. Tonight its Creamy Chicken Pasta 
w/ Baked French Bread. 

I had seen the Bear Creek ads in all the Cooking Magazines so when I came across several of their products I grabbed a couple to try. One of the items is the Bear Creek Country Kitchens Creamy Chicken Pasta Mix. It uses Orecchiette Pasta, which comes in a rich and creamy Chicken flavored Sauce with Carrots. All I added was Water and some Pulled Chicken.

To prepare the dish I'll need; 1 package of Bear Creek Country Kitchens Creamy Chicken Pasta Mix, water, and Pulled Chicken. While at Kroger I had purchased a Simple Truth Whole Roasted Chicken. Pulled all the Meat and I had my Chicken.

To make the Dish; I took a 2 Quart Saucepan, gave it a light spray of Pam Cooking Spray and added
3 1/2 cups water to it. Heated the water to a rolling boil. Whisked in the Pasta and Sauce Mix. Brought the mixture back to a rolling boil. Reduced the heat to a medium boil. Cooked 14 minutes, stirring it occasionally. Removed it from the heat and let it set for 8 minutes. as it cooled it thickened up. As it was cooking it had a mouth watering aroma. And the taste is just as good! Good Chicken and Cheese taste and along with the Pasta, Carrots, and added Chicken makes a delicious Dinner! Love hearty, comfort food, meals.

I also reheated the Pillsbury French Bread which went perfect with the Chicken/Pasta Mixture. For Dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with some Smucker's Sugar Free Hot Fudge Topping.

One of America's Favorites - Buttermilk

Buttermilk refers to a number of dairy drinks. Originally, buttermilk was the liquid left behind after

churning butter out of cream. This type of buttermilk is known as traditional buttermilk.

The term buttermilk also refers to a range of fermented milk drinks, common in warm climates (e.g., the Balkans, the Middle East, Turkey, Afghanistan, Pakistan, Nepal, India, Sri Lanka, Nicaragua and the Southern United States) where unrefrigerated fresh milk sours quickly, as well as in colder climates, such as Scandinavia, Ireland, the Netherlands, Germany, Poland, Slovakia, Slovenia, Croatia and the Czech Republic. This fermented dairy product known as cultured buttermilk is produced from cow's milk and has a characteristically sour taste caused by lactic acid bacteria. This variant is made using one of two species of bacteria—either Lactococcus lactis or Lactobacillus bulgaricus, which creates more tartness.

The tartness of buttermilk is due to acid in the milk. The increased acidity is primarily due to lactic acid produced by lactic acid bacteria while fermenting lactose, the primary sugar in milk. As the bacteria produce lactic acid, the pH of the milk decreases and casein, the primary milk protein, precipitates, causing the curdling or clabbering of milk. This process makes buttermilk thicker than plain milk. While both traditional and cultured buttermilk contain lactic acid, traditional buttermilk tends to be less viscous, whereas cultured buttermilk is more viscous.

Buttermilk can be drunk straight, and it can also be used in cooking. Soda bread is a bread in which the acid in buttermilk reacts with the rising agent, sodium bicarbonate, to produce carbon dioxide which acts as the leavening agent. Buttermilk is also used in marination, especially of chicken and pork, whereby the lactic acid helps to tenderize, retain moisture, and allows added flavors to permeate throughout the meat.

"Meatless Monday" Recipe of the Week - Butternut Squash Bake

This week's "Meatless Monday" Recipe of the Week is a Butternut Squash Bake. Enjoy and Eat Healthy!

Butternut Squash Bake

1 (4 pound) butternut squash - peeled, seeded, and cubed
1/3 yellow onion, minced
1/4 cup extra light olive oil
1/2 cup Italian bread crumbs
1 tablespoon minced fresh thyme
6 ounces crumbled blue cheese (Mayfield)
1 teaspoon roasted ground cumin
1/2 teaspoon ground nutmeg
sea salt and ground black pepper to taste
1/4 cup Italian bread crumbs (Progresso)

1 - Preheat an oven to 425 degrees F (220 degrees C).
2 - Toss the squash, onion, olive oil, 1/2 cup Italian bread crumbs, thyme, and blue cheese in a large mixing bowl. Season cumin, nutmeg, and salt and pepper. Pour the mixture into a large baking dish. Sprinkle 1/4 cup bread crumbs over the squash.
3 - Bake in the preheated oven until lightly browned on top, 35 to 40 minutes

Dinner Tonight: Beans and Smoked Turkey Sausage (Beans and Weenies)

For Breakfast I toasted a couple of slices of Healthy Life Whole Grain Bread that I lightly buttered
with I Can't Believe Its Not Butter. Then I fried up a couple of Jennie - O Turkey Breakfast Sausage Links and prepared the morning cup of Bigelow Decaf Green Tea. After Breakfast i went up the road to the local Kroger to pick up a few items for Mom and myself. Back home, put everything away and went over to Rehab to see Dad, I was lucky to find this place, they are so nice and Dad is real happy with it! So Monday starts the therapy and building his strength back up. Back home I did some laundry and some light cleaning. For Dinner tonight it’s Beans and Smoked Turkey Sausage (Beans and Weenies). Comfort Food!

I've been wanting the Sausage and Beans for a while now. So tonight it’s Beans and Weenies, but I
kicked this version up a bit. I used 1 Butterball Hardwood Smoked Turkey Sausage (sliced into thin bite size pieces), 3 slices of Jennie – O Turkey Bacon (Fried and Crumbled), 1 can of Bush’s White Chili Beans, 1 can Bush’s Vegetarian Reduced Sodium Baked Beans, 1/4 cup of Red Onion (Chopped), 1 teaspoon Ground Cinnamon, 1 teaspoon Ground Mustard, 1 tablespoon Splenda Brown Sugar, Liquid Smoke (Optional and to taste), a couple of shakes (or more) of Frank’s Red Hot Sauce, and 2 cups of Jack Daniel’s Honey Smokehouse BBQ Sauce (or to taste).

I used a small size Dutch Oven that I had sprayed with Pam Cooking Spray. Added all the ingredients except for the Turkey Smoked Sausage to the Dutch Oven, and stirred until well mixed. I turned the stove on medium low, covered the pot and just let it simmer. Another set it and forget recipe! After I got the Beans started I fried up 1 1/2 Butterball Hardwood Smoked Turkey Sausages. I first sliced them up into bite size pieces then fried them on medium until they started to brown and removed them from the heat and put them in a small bowl and set aside.

Then using the same skillet I fried the Sausage in I fried 3 slices of Jennie – O Turkey Bacon, actually
I fried 5 slices actually. Always remember when preparing Bacon to always add 2 extra slices. Because you know you’ll grab a couple of slices, it’s called the Bacon Factor or Bacon Math. I fried it up nice and crisp and when done crumbled it up into small pieces and added it to the Beans. Sausage, Bacon, and Beans are such a natural combo, Bacon gives it that wonderful smoky flavor.

I love dishes that you can set and let them simmer, to me it seems to give food a much richer and
deeper flavor. After a couple of hours I added the Butterball Hardwood Smoked Turkey Sausages to the Beans. Kept the heat on low until it was time for dinner. A good Hearty Meal tonight. You have the smokiness of the Bacon and Liquid Smoke, the Sweetness and Tang of the BBQ Sauce, the Spices, along with the Smoked Turkey Sausage and Beans. I just love all the flavors, a real comfort food favorite! Another plus is the cleanup, just one dutch Oven and 1 skillet to clean. Also baked a loaf of Pillsbury French Bread and had a Diet Dr. Pepper to drink.  For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Turkey Taco Chili

What happens when you bring two favorites—chili and tacos—together? Taste for yourself. This simple and hearty chili recipe will have your kids running to the table. Make it a new go-to weeknight dinner recipe.


1 (16-ounce) package JENNIE-O® Lean Ground Turkey
½ small yellow onion, chopped
1 tablespoon minced garlic
1 (1-ounce) low-sodium taco seasoning
1 (1-ounce) package ranch salad dressing and seasoning mix
4 cups water or low-sodium chicken broth
1 (10-ounce) can diced tomatoes and green chiles
1 (15.5-ounce) can black beans, drained and rinsed
1 (15.5-ounce) pinto beans, drained and rinsed
1 (14-ounce) can corn kernels, drained
corn muffins, if desired


1) Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add onion, garlic, taco seasoning and ranch dressing; stir. Add water, tomatoes, beans and corn. Heat 20 to 30 minutes or until hot.
2) Serve with corn muffins, if desired.

Dinner Tonight; Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries

Well they are wanting to release Dad from the Hospital but he's too weak to come home and all the Rehab and Recovery Centers are full. So I spent most of the day on the phone scrambling to find a place for Dad to go. The Case worker was calling around as I was and we finally got Dad into a unit in neighboring Fairfield, Ohio. So stressful today! Went on up to see Dad later in the afternoon. One long day today, ready to eat! Tonight I prepared a Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries.

I was running late the other day and made a Ham and Swiss Sandwich for a quick Dinner. I enjoyed it
so much I'm having it again tonight for Dinner but I'm Grilling it! To prepare the Sandwich I'll need; Boar's Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, French's Yellow Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Kroger Bakery Sour Dough Bread. I used the flat top Griddle to grill it with. I sprayed the griddle with a very light coat of Pam Cooking Spray and and spread about 1/2 tablespoon of Blue Bonnet Light Butter on it. Heated it on medium heat. I also turned the oven on at 425 degrees.

While the griddle was heating I prepared the Sandwich. Took a slice of the Sour Dough Bread and
topped it with some of the Kraft Mayo, the Boar's Head Ham, the Sargento Swiss, French's Mustard, and added the top slice of the Sour Dough Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 2 1/2 minutes. Until both sides were golden brown! What a Sandwich, Sour Dough Bread just makes everything that much better! I'll have to buy another loaf of it sometime soon. Love the combo of Ham and Swiss!

Bison Pasta Salad

1 lb. cooked cork screw noodles
1 (8-oz.) can black olives, chopped
10 cherry tomatoes
12 oz. Bison summer sausage, chopped
7 T. Parmesan cheese, grated into small pieces
1 (16-oz.) Seven Seas Viva Herbs
1 bunch broccoli flowerets Spices dressing
2 sm. zucchini, thinly sliced
8 green onions, chopped

Fried Shrimp w/ Roasted Butternut Squash and Green Beans/ Diced Potatoes

Dinner Tonight: Fried Shrimp w/ Roasted Butternut Squash and Green Beans/ Diced Potatoes

Spent most of the day at the Hospital with Dad. He seems to be doing better. They found that he has a bladder infection which was causing some of the discomfort. So hopefully he's on the right track to getting better and returning home!  Straightened up the house and took a quick nap. For Dinner for me and Mom I prepared Fried Shrimp w/ Roasted Butternut Squash and Green Beans/ Diced Potatoes. A much needed delicious and hot meal after a long morning and afternoon.

While at Kroger yesterday I picked up more of the huge Freshwater Shrimp. My family absolutely love these Shrimp! I rinsed them off in cold water and removed the shells, they were already deveined. To prepare these I’m using McCormick Golden Dipt Cracker Meal Seafood Fry Mix.

Poured about 1 inch of olive oil into large skillet. Heat oil to 350°F on medium heat. I then took a 1/2 cup of the Cracker Meal Mix in a Hefty Zip Lock Plastic Bag. Take the peeled shrimp, 3 at a time and place them in the bag and shake until Shrimp had a nice coating on them. Had all the Shrimp coated I then began to fry them. Frying them about 3 minutes the shrimp, a few pieces at a time, in the hot oil until light golden brown turning after 1 1/2 minutes. Drain on paper towel lined plate . The McCormick Cracker Meal Mix was excellent! Nice crunch and seasoning!

Then for one side I prepared some Roasted Butternut Squash, easy recipe for some delicious
Butternut Squash! This has quickly become a family favorite. I purchased 1 small package of Diced Butternut Squash at Kroger. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Crumbled Bacon Bits, 1 tablespoon Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.

For another side I heated up a can of Del Monte Cut Green Beans and Potatoes. I really like using the Del Monte Cut Green Beans and New Potatoes, contains 2 of my favorite vegetables (Green Beans and Potatoes). I also baked a loaf of La Brea Whole Grain Bread, for Mom and Dad. For dessert later a Weight watcher’s Cookies and Cream Ice Cream Bar.

McCormick Cracker Meal Seafood Fry Mix

Cracker Meal Seafood Fry Mix adds extra crunchiness to fried and baked foods. All ingredients have
been specially selected to provide a superior coating that seals in natural juices for fish, seafood, poultry, meats and vegetables.

Enriched Bleached Wheat Flour (Flour, Niacin, Reduced Iron, Thiamine Mononitrate, Riboflavin, And Folic Acid), Whey (Milk), Dextrose, And Soybean Oil.

Serving size
1/4 cup Mix (32g)

All You Need
1/2 cup Cracker Meal
1 lb. Fish or Seafood*
Water or Milk
Vegetable Oil
1. POUR Cracker Meal into shallow dish or large plastic bag. Moisten fish, cut into serving-size pieces, or seafood with water or milk. Shake off excess.
2. COAT fish, several pieces at a time, evenly with Cracker Meal. Let stand 5 minutes. Discard any remaining Cracker Meal. Fry as directed below. Serve with McCormick® Cocktail Sauce or Tartar Sauce. Use the entire package to coat 4 lbs. fish or seafood.

*Best with tilapia, trout, catfish, shrimp, or scallops. Also try with shucked oysters and clams, or soft-shell crabs (pierce several times before coating).

Pan Fry: Pour oil to a depth of 1/4 inch in a large skillet; heat to 350°F on medium heat. Fry fish, in batches, 2 to 4 minutes on each side or until fish flakes easily with a fork. Drain on paper towels.

Oven Fry: Cover bottom of shallow baking pan with melted butter. Arrange fish or seafood in a single layer in pan; turn to coat with butter. Bake in preheated 425ºF oven 10 to 20 minutes until golden brown around edges and fish flakes easily with a fork.

Flavorful Tips:
• For a thicker coating, dip fish in a mixture of 3 tbsp. milk and 2 beaten eggs before coating with Cracker Meal.
• Coat boneless skinless chicken breast halves or chicken parts as directed. Bake in 400ºF oven 20 to 30 minutes for chicken breast halves or 45 to 50 minutes for chicken parts.
• Use Cracker Meal instead of bread crumbs when making meat loaf or meat balls.

I wasn't sure exactly what a Samosawas so I found it on wiki which said; A samosa is a fried or baked dish with a savory filling, such as spiced potatoes, onions, peas, lentils, macaroni, noodles or minced meat. Easy Turkey Samosas

Samosas, made popular in Southeast Asia, are hitting restaurants across the U.S. and we’re not surprised. This recipe features a savory filling wrapped and fried crispy. Try them as an appetizer or entrée tonight!


1 tablespoon olive oil
1 (1-pound) package JENNIE-O® Lean Ground Turkey
½ cup finely chopped onion
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground chili powder
½ teaspoon kosher salt
½ cup chopped fresh cilantro leaves
12 eggroll wrappers
vegetable oil for frying

1) In large skillet add oil. Cook ground turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) Add onions, cumin, coriander, chili powder, and salt. Stir in cilantro leaves and cool completely.
3) Brush edges of wrapper with water. Place 3 tablespoons of turkey mixture in center of eggroll wrapper. Fold top corners over filling creating a triangle at the top. Fold point of triangle down and fold bottom corners over top of triangle to seal.
4) Heat oil to 325°F in large deep sided skillet or Dutch oven. Place samosas in hot oil, in small batches and cook 2 to 3 minutes or until lightly browned.
* Always cook to an internal temperature of 165°F.

Kitchen Closed!

Dinner Tonight: Kitchen Closed today

We had to call 911 and have Dad taken back to the Hospital. He was so weak he couldn't even get up
from chair. It looks as though they are going to keep him there for 1-2 days and then move him to a Rehab and Assisted Living Center to see if they can build his strength back up, hopefully it's not a permanent move. So its been a very long day for all of us. I picked up a Salad at the Hospital Cafeteria for a late Lunch. I returned home about 5:00 this afternoon. Too tired to cook! I just made a Ham Sandwich with a few Potato Chips for Dinner. I used Boar's Head Sweet Sliced Ham, French's Yellow Mustard, Kroger Bakery Sour Dough Bread, Ruffle's Reduced Fat Potato Chips, Helluva French Onion Dip. Not a bad last-minute Dinner! Kitchen will reopen tomorrow!

Tiger Nut Horchata Recipe
If you're familiar with Mexican horchata, you'll love this traditional Spanish-style version just as
much, if not more! To make tiger nut horchata, first hydrate one cup of tiger nuts by soaking them in water for 24 hours. Blend the hydrated tiger nuts into a paste, adding water as needed. Strain the tiger nut liquid thoroughly through a sieve. Add four cups of hot water and blend until desired consistency is achieved. Sweeten your homemade tiger nut horchata with a touch of cinnamon and sugar. Enjoy! (This recipe makes two servings).

Buffalo Teres Major Steak and Sauteed Mushrooms w/ Roasted Garlic Cauliflower and Mini Ears of Sweet Corn

Dinner Tonight: Buffalo Teres Major Steak and Sauteed Mushrooms w/ Roasted Garlic Cauliflower and Mini Ears of Sweet Corn.

For Breakfast this morning I prepared a toasted Healthy Life Whole Grain English Muffin that I
topped with some of my favorite Jam, Smucker's Sugarless Blackberry Jam. Along with that morning cup of Bigelow Decaf Green Tea, I was set for the morning! A lot cooler morning than we've been having out there, 35 degrees. For the day it was around 58 degrees and showers on and off. After Breakfast I went to Walmart, needed some Bigelow Decaf Green Tea and printing ink for the copier. Stopped by the bank and dropped a couple of letters at the Post Office on the way back. Back at home did some light cleaning around the house. For Dinner tonight I prepared a Buffalo Teres Major Steak and Sauteed Mushrooms w/ Roasted Garlic Cauliflower and Mini Ears of Sweet Corn.

I used the Wild Idea Buffalo 8oz. Buffalo Teres Major Fillets that I had just ordered from Wild Idea.
It's sometimes tough to find these Steaks, they sell out as soon as they become available because they are so tender! Beyond any doubts one of the most tender cuts of any steak, Beef or Buffalo, you can find. I pan fried it in Extra Light Olive Oil and seasoned it with a bit of Crushed Dry Thyme along with McCormick Grinder Sea Salt and Black Peppercorn. I fried it about 4 minutes on one side and about 3 1/2 minutes on the other side, it gets done very quickly because it’s so lean. The Fillet came out medium rare with a beautiful char on it! These Wild Idea Buffalo Teres Major Steaks are tender and delicious, love them! I also prepared some Sauteed Mushrooms to go with my Steak. I don't think there's a better partner for Steak than Mushrooms!

For one side I prepared a bag of Path of Life All Natural Roasted Garlic Cauliflower. I purchase this
at our local Meijer here in West Chester. Love shopping at Meijer, great selection of products! I had purchased a couple of Bags of it and had used one earlier. So to prepare the Cauliflower; It comes in a microwavable steamable bag. Just heated for 4 minutes, let it stand for 1 minute and serve. I’ve got another keeper product here! Fantastic Roasted Garlic flavor and they’re only 80 calories and 3 net carbs.

Then I boiled some Green Giant Mini Ears of Sweet Corn. As good and sweeter than fresh Corn on the Cob. As all frozen Green Giant Products, the items always taste fresh when prepared. For Dessert later tonight I’ll be having a new one from Weight Watcher's, Peanut Butter Caramel Ice Cream Candy Bar .
